Position Summary 

As the Grill Cook, you are responsible for the precise preparation and execution of all grilled menu items in accordance with the restaurant’s recipes and standards. The Grill Cook plays a critical role in maintaining product quality, proper cooking temperatures, and refined plate presentation.  

Role Responsibilities  

• Prepare and cook all grilled meats, seafood, poultry, and vegetables to exact temperature specifications.  
• Execute dishes with precision, consistency, and adherence to established recipes and plating standards.  
• Properly season, rest, and finish proteins to ensure optimal flavor and texture.  
• Monitor grill temperatures and cooking times to ensure quality and consistency.  
• Maintain strict portion control and minimize product waste.  
• Set up and break down grill station daily according to opening and closing procedures.  
• Ensure all mise en place is prepared and organized before service.  
• Maintain cleanliness and organization of the grill area throughout service.  
• Communicate effectively with expediters and team members to ensure timely execution.  
• Follow all food safety, sanitation, and HACCP standards.  
• Properly label, date, and store products according to company policies.  
• Inspect product quality and report any inconsistencies or concerns to leadership.  
• Maintain clean and well-maintained grilling equipment.  
• Work collaboratively with kitchen team members to ensure smooth service flow.  
• Train other employees on grilling techniques and station responsibilities.  
• Any other task as assigned by Manger.

Knowledge, Experience and Skills 

• 2+ years of grill or hot line experience in a fine dining or upscale restaurant.  
• Understanding of meat temperatures, resting techniques, and protein fabrication.  
• Understanding of local food safety and sanitation standards and required certifications.  
• Ability to perform under pressure in a fast-paced environment.  
• Strong attention to detail and commitment to excellence.  
• Ability to work in a dynamic environment.  
• Ability to work both independently and in a team environment.  
• Strong work ethic and customer-focused approach.  
• Ability to work a flexible schedule including days, nights, weekends, and holidays.

Physical Requirements  

• Ability to perform essential job functions consistently, safely, and successfully with the ADA, FMLA, and other federal, state, and local standards, including meeting qualitative and/or quantitative productivity standards.  
• Ability to maintain regular, punctual attendance consistent with the ADA, FMLA, and other federal, state, and local standards.  
• May be able to lift and carry up to 25 lbs. at times.  
• Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the work area and property.   
• Bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment.  
• Prolonged periods of standing.  

Compensation 

• The hourly rate for this position is $25 per hour.  
• The determination of what a specific employee in this job classification is paid depends on a number of factors, including, but not limited to, prior employment experience, job-related knowledge, qualifications and skills, etc.
