Food & Beverage Manager

Reports to : Director of Food & Beverage

Salary: $80k - $90k

Fouquet’s New York is looking for a qualified and highly motivated Food & Beverage Manager who shares a passion for Hospitality. The role owns beverage purchasing, inventory, invoices, cost control, cocktail development, and bar service standards, while also acting as an operational F&B Floor Manager focused on service, guest experience, and team performance. All beverage projects to be presented to the Director of F&B for final approval.

Beverage Management Responsibilities :

• Manage liquor, wine, beer, mixers, and beverage-related ordering.
• Maintain par levels and oversee inventory, reconciliation, and Yellow Dog entries.
• Review and enter beverage invoices and monitor costs, variances, and waste.
• Develop seasonal cocktails and beverage offerings for outlets, events, and activations.
• Maintain cocktail recipes, presentation, consistency, and proper costing.
• Train and coach bartenders, barbacks, and cocktail servers.
• Maintain strong operating, cleanliness, and organization standards across all bars.
• Work closely with vendors and suppliers.

F&B Floor Management Responsibilities :

Provide operational oversight across Brasserie Fouquet’s, Élysée’s, Titsou, Le Vaux Rooftop, In-Room Dining, and Minibar.

• Act as Manager on Duty across F&B outlets as needed.
• Oversee opening, service, and closing operations.
• Support teams during peak periods and maintain luxury service standards.
• Coach employees and support training and performance management.
• Handle guest requests, complaints, service recovery, VIPs, and special requests.
• Work closely with Culinary, Front Office, Events, Reservations, Finance, and Purchasing.
• Ensure compliance with health, safety, sanitation, responsible alcohol service, and company standards.
• Support the Director of Food & Beverage with projects, events, scheduling, and operational needs.

Requirements:

• Previous Beverage Manager, Bar Manager, Restaurant Manager, or F&B Manager experience in a luxury hotel or upscale restaurant.
• Strong beverage, inventory, purchasing, and cost-control knowledge.
• Experience with cocktail development and team training.
• Strong leadership, communication, organization, and guest-relations skills.
• Flexible availability, including evenings, weekends, and holidays. (Primarily evenings)
• Bachelor’s degree in Hospitality Management, Business, or related field preferred
• Must exemplify the highest standards in honesty, integrity, humility and leadership
• Proven team player is willing to roll up your sleeves - a good leader should be willing and able to do whatever he or she asks of their team! 
• Good time-management skills
• Great interpersonal and communication skills
• Food Handler’s Permit or ServSafe Manager’s Certification, & Beverage Certification
