Informations générales CHEF DE PRODUCTION H/FChez Sodexo, nous restons attachés à notre Raison d'Etre, depuis notre création en 1966 par Pierre BELLON :Offrir un quotidien meilleur pour construire une vie meilleure pour tous.SODEXO Justice et Services accompagne avec fierté les organismes gouvernementaux, les forces armées et les acteurs de la Justice grâce à ses services de restauration et de gestion des installations.Venez goûter à l'aventure unique de Sodexo !Villenauxe-la-Grande CDITemps CompletVotre quotidien chez nous :Chef de production / Chef de cuisine en centre pénitentiaire H/FðVillenauxe-la-Grande (10370) ð CDI – Temps pleinPour un site rattaché à notre segment Ministères et Institutions, nous recherchons un(e) Chef(fe) de cuisine / Chef(fe) de production culinaire pour un établissement pénitentiaire situé à Villenauxe-la-Grande.Vous serez en charge de l’encadrement d’une cuisine de production destinée aux repas de détention, avec la supervision de plusieurs personnes détenues participant à la production.Vos missions (liste non exhaustive) :Gestion de la production culinaire dans le respect des fiches techniques et des menus.Management, animation et organisation d'une équipe de cuisine.Planification de la production et répartition des tâches.Gestion des commandes, des approvisionnements et des stocks.Contrôle de la qualité des préparations et du respect des normes d'hygiène (HACCP).Encadrement et organisation de la production dans le respect des contraintes du milieu pénitentiaire.Collaboration avec les équipes de détention et les différents interlocuteurs du site.Encadrement des personnes détenues affectées à la cuisine dans le respect des procédures de sécurité.Garantie de la continuité du service de restauration et du respect des exigences contractuelles.Suivi des coûts matières et maîtrise du budget alimentaire.Veille au respect des règles de sécurité alimentaire et des procédures internes.Gestion des relations avec les fournisseurs et contrôle des livraisons.Formation et accompagnement des équipes afin de garantir la qualité de service.Suivi des indicateurs de performance et mise en place d'actions d'amélioration continue.Dans le cadre de ces missions non exhaustives, est amené à collaborer avec les autres services de l’entreprise.
