An exclusive, upscale CCRC in Lexington, MA, is seeking an experienced, full-time Sous Chef to help direct its culinary operations. Operating similarly to an affluent private club rather than a traditional retirement community, this single-site, non-profit community caters to vibrant residents who expect high-level, fine-dining quality. This position offers total autonomy over menus and recipes without corporate constraints, backed by a non-profit budget focused purely on exceeding resident expectations instead of driving shareholder profit.
This role provides an exceptional work-life balance with no late nights, a structured 40-hour work week, and a genuine commitment to personal time. Leadership fosters a highly supportive culture that offers flexible scheduling and generously accommodates vacation travels or extended family visits.
Sous Chef Responsibilities:
- Oversee and direct the food production, preparation, and quality presentation for multiple dining venues and special events, maintaining an emphasis on scratch cooking with fresh, premium ingredients.
- Supervise, train, and coach kitchen personnel, serving as the primary backup to the Executive Chef and acting as the opening or closing Kitchen Manager.
- Handle protein fabrication, including trimming, portioning, and breaking down beef, seafood, and poultry.
- Prepare from-scratch stocks, specialized soups, and precise reductions or sauces utilizing proper thickening agents.
Sous Chef Requirements:
- A degree in Culinary Arts or equivalent professional experience.
- At least two years of culinary management experience within an upscale dining or private club environment.
- Comprehensive knowledge of food and labor cost controls, recipe formulation, and menu development.
- Current ServSafe Certification, Choke Save Certification, and Allergen Awareness Training (or equivalents).
- Flexibility to work a variable schedule that includes shifts on weekends and holidays.
Compensation Package Details:
- Base Salary: $70,000 - $75,000 ($35/hr)
