Executive Chef

Position Summary: The executive chef will train and manage all campus wide (Hospital, Long Term Care, Future Hostel, Behavioral Health Units) kitchen personnel and supervise/coordinate all related culinary activities; estimate food consumption, requisition and/or purchase food to maximize purchasing leverage; select and develop recipes; standardize production recipes to ensure consistent quality; establish presentation techniques and quality standards; plan and price menus; ensure proper equipment operation/maintenance; ensure proper safety and sanitation levels in kitchen areas. Prepare and cook special meals for select occasions and events. Maintain and continue to build partnerships for the USDA Donation Program. Receive, safely process and store donated foods for YKHC. Position Qualifications:Minimum Education: Technical, Trade, or Vocational School Degree. A culinary degree is preferred.Minimum Experience: 10 or more years of food industry and/or culinary management experience. You may substitute 1 additional year of experience for each year of education below the basic requirement above as long as you possess a high-school diploma or GED.License, Certification, Registration: Current manager level serve-safe certification.Equipment/Tools/Word-Aids: Knowledge in the use, handling and maintenance of food preparation utensils and equipment, kitchen small appliances and institutional size cooking appliancesSpecialized Knowledge and Skills: The ability to manage in a diverse environment with focus on patient and customer services is essential to success in this role. Must demonstrate the ability to adapt regional traditional foods for patients. Meet nutritional needs of patients by serving culturally relevant food.Supervisory Responsibilities: Directly supervises hospital kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases. Provide oversight for all YKHC kitchens.
