Line Cook

Hey!

I'm doing a gut healing protocol and need meals that are:

1. No gluten or dairy

2. Mostly soups — this is mainly what I'm looking for your help on

3. Never leftover protein/meat — histamine accumulates in fish/shellfish/meat as it sits so proteins have to be cooked fresh same-day, no cooked-protein leftovers. Given that, I'm thinking it makes most sense for you to focus on soup bases and vegetable-forward dishes I can batch and store, and I'll add fresh protein myself day-of (or we figure out a same-day protein rhythm that works)

4. Diverse plants and veggies — lots of variety and different each week

5. Low histamine and low FODMAP — so no garlic, onion bulb, fermented anything (soy sauce, fish sauce, miso), aged/cured foods, and chiles. Ginger, galangal, lemongrass, scallion greens, herbs, mustard seed, lime and others are ok

6. Specific gut-supporting nutrients (I have a full list) — resistant starch (cooked-then-cooled rice and roots), polyphenols, and targeting deficiencies like copper and iron

I'm looking for someone to cook soups for me 3-4 hours each week, with delivery on Mondays early evening to downtown Austin. I'd have the ingredients delivered to your kitchen each week.
