Sous Chef Position at Bon Apptit

We are hiring immediately for a full time SOUS CHEF position at Soka University, located at 1 University Drive, Aliso Viejo, CA 92656. Online applications are accepted only. The schedule is full time, Sunday through Thursday, from 11:00 AM to 8:00 PM. More details will be provided upon interview. Four years of previous culinary, leadership, and high-volume production experience is required. The fixed pay rate is $28.00 per hour.

Job Summary: Helps Executive Chef prepare and cook foods. Coordinates activities of cooks and other food-service associates. Assumes responsibility for kitchen and food-service associates in the absence of Executive Chef. Essential duties and responsibilities include:

• Cooking and preparing food following approved recipes and production standards. Ensuring all deadlines are met based on production orders.
• Supervising hourly food service associates. This includes interviewing, scheduling, payroll, training, counseling, participating in reviews, and recommending disciplinary action, as appropriate.
• Storing food in designated areas following all corporate, state, and federal food safety and sanitation procedures.
• Ensuring proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures.
• Maintaining sanitation of equipment, supplies, and utensils. Cleaning workstation thoroughly before leaving area. Keeping display equipment clean and free of debris during meal service to comply with all sanitation, safety, production, and merchandising requirements.
• Interacting with customers to resolve complaints in a friendly, service-oriented manner. Relaying relevant information directly to supervisor.
• Demonstrating complete understanding of daily menu items and accurately explaining them to associates and customers.
• Keeping up with peak production and service hours.
• Monitoring inventory and deliveries of product and supplies. Tracking product production, consumption, and waste. Informing supervisor when supplies or product are low.
• Performing other duties as assigned.
