Job Description Under the direction of the General Manager, the incumbent is responsible for directing staff of the signature gourmet restaurant to provide maximum guest service and satisfaction while achieving financial goals. Essential Job Functions Identify and define business needs and implement solutions that benefit restaurant operations. Work with the General Manager and Chef to develop and administer controls for all phases of the restaurant in an economical and profitable manner while maintaining established standards. Assist the General Manager with menu item changes based on product mix reviews and guest feedback. Ensure that the restaurant supports the casino by providing outstanding service to VIP guests during special events. Institute cost control procedures, inventory management, and performance standards. Counsel, guide, train, and instruct assigned personnel, including kitchen staff, in the proper performance of their duties. Develop or implement procedures, formats, budgets, testing, training, and documentation for manual and automated systems. Manage staff replacement within departmental guidelines. Develop and implement operating standards as necessary. Communicate with management, other departments, and personnel to address POS system needs. Provide project leadership and project management as assigned. Act as department lead in the absence of the General Manager. Act immediately on all customer complaints to ensure timely resolution. Responsible for back‑of‑house operations in the absence of the room chef. Qualifications College degree in business or related field preferred; may be waived with extensive experience. Three years of fine dining experience, with at least two years in a management role, preferred. Additional Requirements Familiarity with financial data and cost control techniques. Proven ability to develop budgets and business plans. Proven ability to write documentation, procedures, and training programs. Project management experience, including drafting plans and measuring progress. Excellent interpersonal, customer service, communication, team‑building, and problem‑solving skills. Superior verbal and written communication skills. Ability to coordinate multiple tasks simultaneously. Ability to compile, compute, and analyze data for reports. Proficiency with POS systems. Ability to negotiate and build relationships with diverse departments and casino personnel. Ability to implement strategic visions and plans into day‑to‑day operations. Work Environment The role requires frequent standing, walking, use of hands and arms, and tasting or smelling. The employee must frequently lift or move up to 50 pounds. Vision requirements include close, distance, color, peripheral vision, depth perception, and focus adjustment. The employee must maneuver to all restaurant areas, including food and beverage service and warehouse areas. Effective communication in English is required. Closing First preference in hiring is given to members of the Seminole Tribe who meet the job requirements, followed by other federally recognized Native American tribes.
