Kitchen Manager / Prepared Foods Lead

Burke’s Seafood is a family-owned seafood market and casual restaurant serving the Quincy community since 1979. We are looking for an experienced, hands‑on Kitchen Manager / Prepared Foods Lead to take ownership of our kitchen operation and help us continue to grow our prepared foods business. This is not a traditional fine-dining chef position. We operate a busy, fast-paced seafood market and counter-service restaurant where everyone works as a team. The right person will be equally comfortable leading the kitchen, working the line during a busy lunch, organizing production during slower periods, developing prepared foods for our retail market, and stepping in wherever needed to help the business run smoothly. You will work directly alongside a hands‑on owner and lead a kitchen team that includes both experienced employees and younger high school and college-age staff. Oversee day-to-day kitchen operations, including food preparation, cooking, production, cleanliness and organization. Lead the kitchen during restaurant service while remaining willing and able to work the line alongside the team. Manage kitchen staffing, scheduling, training and day-to-day supervision. Train and mentor younger employees, including high school and college-age staff, while maintaining clear standards and accountability. Manage kitchen inventory, ordering, receiving, rotation and proper storage. Monitor food costs, portion control, yields, waste and overall kitchen productivity. Maintain high standards for food safety, sanitation, temperature control, labeling and proper food‑handling procedures. Plan and oversee daily production of prepared foods for our retail seafood market. Help expand our prepared foods business by improving existing products, developing practical new offerings and identifying opportunities to use kitchen capacity productively outside peak restaurant hours. Maintain consistency in recipes, portions, presentation and product quality. Coordinate restaurant and retail‑market production based on changing daily demand. Work collaboratively with our fish‑market team and assist with market operations when needed. Communicate professionally with customers and vendors, both in person and by phone. Help create an organized, positive and productive kitchen environment. What We’re Looking For We are looking for a working manager , not someone who wants to manage from the sidelines. The ideal candidate has: Strong professional cooking and kitchen experience, preferably in a high-volume casual restaurant, seafood, prepared foods, catering or similar environment. Previous experience supervising or leading kitchen employees. Strong organizational skills and the ability to manage multiple priorities in a small, fast-moving operation. Working knowledge of inventory management, ordering, food cost, waste control and kitchen production. Strong understanding of food safety and sanitation practices. The ability to train, communicate with and motivate employees with varying levels of experience. A practical, team‑first approach and willingness to jump in wherever the business needs help. Good communication skills and comfort interacting professionally with customers, vendors and employees. Reliability, maturity and good judgment. An interest in helping build and improve a business rather than simply maintaining an existing menu. Why Burke’s Seafood? Compensation: Competitive salary commensurate with experience, plus performance-based bonus. Schedule: Full-time. Tuesday - Saturday. Closed Sunday and Monday. No Late Nights.
