Lead Line Cook

The Penrose is looking for a strong and talented Lead Line Cook!

WHO YOU ARE:
- 3+ years of experience in a high-volume kitchen
-Ability to work efficiently and calmly in a fast-paced environment
- Excellent communication skills
- Strong time management skills with the ability to prioritize and organize work assignments
- Ability to lead and support fellow line cooks during service
- Strong knowledge of cooking techniques, kitchen equipment, and station execution
- Ability to maintain consistency and accuracy under pressure
- Bilingual (Spanish-speaking) is a plus

WHAT YOU’LL DO:
- Help lead day-to-day kitchen operations
- Build strong relationships with kitchen staff and help maintain team morale
- Maintain systems for portion control and recipe adherence
- Ensure consistency in cooking, plating, and execution across all stations
- Assist with daily line checks; oversee station setup, breakdown, and service readiness
- Assist with ordering and inventory
- Support prep organization and ensure prep lists are completed accurately and on time
- Maintain a clean and organized kitchen in compliance with DOH standards and sanitation practices
- Ensure all food meets quality standards
- Communicate effectively during service (including 86s, changes, timing)
- Step in on any station as needed to support service

PHYSICAL REQUIREMENTS:
- Ability to stand and walk for extended periods (8–10 hours per shift)
- Ability to lift and carry up to 50 pounds
- Ability to perform repetitive motions (chopping, stirring, plating)
- Comfortable working in a fast-paced, high-temperature environment
- Ability to bend, stoop, reach, and access storage areas
- Manual dexterity to safely operate kitchen equipment
