Capacity Requirements:

Mental Capacity: Skills, learned abilities, training, experience, and knowledge.

·        Assumes 100% responsibility for quality of products served.

·        Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

·        High School diploma or equivalent

·        Experience preferred but not necessary

·        Demonstrate cooking skills and be able to follow printed recipes and plate specifications.

·        Able to excel in a guest and team-oriented environment

·        The employee must have the ability to take direction in a positive manner.

·        The employee must have basic food safety knowledge and/or be serve safe certified. Must get 90% or above on food safety quiz.

·        Knowledge of basic kitchen equipment operations & maintenance.

Physical Capacity: Stamina, physical demands, energy, and tenacity.

·        Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in ovens, grills, fryers and a variety of other kitchen equipment.

·        Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.

·        Portions food products prior to cooking according to standard portion sizes and recipe specifications.

·        Maintains a clean and sanitary work station area including tables, shelves, grills, fryers, pasta cookers, sauté burners, convection oven and refrigeration equipment.

·        Prepares item for grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.

·        Follows proper plate presentation and garnish set up for all dishes.

·        Handles, stores and rotates all products properly.

·        Assists in food prep assignments during off-peak periods as needed.

·        Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.

·        Performs other related duties as assigned by the Chef or manager-on-duty.

·        Be able to reach, bend, stoop and frequently lift 40 pounds

·        Be able to work in a standing position for long periods of time.

·        Must have the ability to work in a fast paced and hot environment.

·        Must have regular, reliable & dependable transportation & attendance.

Emotional Capacity: How you relate to others.

·        Attends all scheduled team member meetings and brings suggestions for improvement.

·        Effective English communication skills, both verbal & written to clearly communicate with managers, kitchen & serving staff.

Time Capacity: Available time + self-discipline to use time effectively.

·        Must have open availability, including holidays & weekends.

·        Hours per week varies
