The Lead Line Cook is the senior cook on shift when the Chef/Sous Chef isn't present, responsible for food quality, consistency, and pace during service, as well as training and coordinating other line cooks.
Key Responsibilities
- Run assigned stations (sauté, grill, prep, etc.) at a high standard of speed, consistency, and presentation
- Act as shift lead in the kitchen in the absence of the Head Chef, overseeing ticket flow and quality control
- Train, mentor, and supervise line cooks and prep cooks; delegate tasks during service
- Ensure all dishes meet recipe specs, plating standards, and portion consistency
- Manage mise en place and prep lists to keep the line stocked and ready for service
- Maintain a clean, organized, and code-compliant kitchen (health, safety, and sanitation standards)
