1. 조리 및 품질 관리
표준 레시피 및 플레이팅 준수, 모든 음식의 일관성, 맛, 양, 프레젠테이션 점검
2. 인력 운영 및 스케줄링
예상 고객 수에 따른 직원 스케줄 관리, 조리사 채용(면접, 온보딩, 교육), 초과 근무 및 대기자 명단 관리로 인건비 목표 달성3. 교육 및 개발
주방 직원 온보딩 진행, 스테이션별 교차 교육, 기술 지도, 성과 평가 및 피드백 제공
4. 재고 및 원가 관리
정기적인 재고 조사, 적정 재고 수준(Par Level) 유지, 주문/재주문 관리, 식자재 사용량, 폐기, 도난 추적, 원가(COGS) 목표 달성을 위한 분량 통제5. 식품 안전 및 규정 준수
HACCP/ServSafe 지침 준수 (보관, 온도 기록, 라벨링, 위생), 정부 위생 검사 관리 및 90점 이상 유지6. 생산 계획 및 준비 관리
일일 판매 예측 기반 준비 목록 작성, 폐기 최소화 및 피크 시간대 티켓 흐름 원활화
7. 구매 및 공급업체 관계
최적의 가격/품질을 위한 공급업체 물색 및 협상, 구매 관련 인보이스 승인, 주간 식자재(레스토랑디포, 샘스클럽 등) 직접 픽업8. 서비스 관리 및 소통
서비스 중 주방 지휘(Expediting), 문제 해결, 티켓 시간 관리, 홀 매니저(FOH)와의 소통, 교대 전/후 브리핑 및 기록9. 장비 및 유지보수
주방 장비 성능 모니터링, 예방 정비 스케줄링, 수리 보고 및 간단한 수리/재배치 관리
10. 보고 및 예산
