Job Title Dietary Operations Manager (20018027) (260004HU) Organization Rehabilitation & Correction - Operation Support Center Work Location DRC Central Office-Fran-ODOT 1980 West Broad Street Columbus 43223 Primary Location United States of America - OHIO - Franklin County - Columbus Compensation 32.35 Schedule Full-time Work Hours 40 Union Exempt from Union Primary Job Skill Medical Technical Skills Basic Documentation, Food Services, Management, Records Management, Policy Direction Professional Skills Attention to Detail, Consultation, Critical Thinking, Interpreting Data, Teamwork Job Responsibilities Works under general direction and requires thorough knowledge of dietetics/nutrition Organize, plan, develop, and implement a comprehensive monitoring program of contract nutrition services statewide to assure services delivered meet applicable ODRC policy and protocol, standards & or court orders as well as state and federal dietary regulations (e.g., monitoring and evaluation of nutrition services processes Quality assurance activities, staffing expectations and fulfillment Critical review of major nutrition service occurrences that impact healthcare Credential monitoring and clinical competence monitoring Evaluates the data generated and report findings to institution staff, the Office of Acquisition & Contract Compliance (OACC) Assistant Bureau Chief, and Office of Correctional Healthcare administrators Evaluate the contractors planned remediation / action plan for findings as indicated and provide feedback to all parties involved Routinely evaluate and inspect meals and nutrition service operations for quality and adherence to ODRC policy, procedure, state and federal regulations Prepare and maintain files and information on patient nutrition status/care Prepare monthly diet summary and nutrition care reports Work directly with the clinical and food service staff advising and monitoring (consulting) patients on patient services Coordinate with contract food service provider on development of master menu, diet menus, holiday menus, construction menus, sack meal menus, and religious meal accommodation menus, reviewing for compliance with nutritional requirements and providing final approval for implementation Update and maintain the daily food production record (DRC1181) and religious meal accommodation tracking log Consult with contract provider, dietitian and food service managers in proper interpretation of menus, approval of menu deviations and appropriate substitutions. Investigate and respond to inquiries about nutritional healthcare concerns from internal and external stakeholders as necessary during the course of contract monitoring Monitor nutritional service compliance regarding healthcare with state and federal regulations, standards and court orders and report findings to the OACC Assistant Bureau Chief & the Office of Correctional Healthcare Provide comprehensive monitoring at the Ohio Reformatory for Women, Correctional Reception Center, Pickaway Correctional Institution & Franklin Medical Center Consult with ODRC Medical Director and clinical staff on all matters pertinent to regular or modified diets to assess nutritional requirements Ensure compliance with regulations to establish plans and procedures for clinical diet programs and policies Evaluate current research and products for implementation/use and recommend changes as needed. Conduct training for ODRC and contract staff as necessary on quality assurance and other healthcare nutrition service policies, procedures and issues Facilitate onboarding of contract dietetics personnel Assign, maintain and update electronic medical record workflows for nutrition staff Conduct annual nutrition services site visit for all institutions and audit diet tech, medical and food service operations using developed nutrition services metric tool Serves as the ODRC liaison with other state agencies and/or states in establishing positive working relationships Benchmarks with other prison systems to assure consistent efficient nutrition services in the State of Ohio Attend meetings, training and conferences; may give presentations and conduct training Responds both verbally and in writing to questions and concerns Works on special projects and/or committees assigned Perform other duties as assigned Must always conduct oneself professionally and in a law-abiding manner in accordance with Ohio Department of Rehabilitation & Correction Standards of Employee Conduct. Qualifications Current licensure as dietitian as issued by Ohio Board of Dietetics per Section 4759.06 of Revised Code; 18 months training or 18 months experience in state & federal guidelines & accreditation standards regarding dietetics/nutrition for agency of employment; 18 months training or 18 months experience in employee training & development. Or equivalent of the Minimum Class Qualifications for Employment noted above may be substituted for the experience requirements, but not for the mandated licensure.
