The Rose Gaming Resort is a $480 million gaming and entertainment complex destination, located alongside I-95 in Dumfries, Virginia. The Rose Gaming Resort generates an estimated $35.5 million in annual tax revenues and employs more than 500 team members.

JOB SUMMARY: Responsible for coordinating and managing all culinary performance in all venues.

ESSENTIAL DUTIES AND RESPONSIBILITIES: Executive chefs complete a variety of creative, organizational and leadership tasks to ensure a kitchen runs optimally and provides excellent meal service to patrons. Establishes department standards, guidelines, and objectives, and maintains other administrative processes such as budget and staffing to ensure proper planning and efficient operation of assigned areas. Maintains confidentiality of all privileged information in accordance with established procedures with company policy and state regulations. Reviews activities in all reporting areas to gauge and improve staffing levels, working conditions and other matters which influence quality guest service and profitability. Reviews the work activities of subordinate employees to ensure that work is being performed within the standards established by management. Developing unique and cuisine-appropriate menus Staying current on developing trends in the restaurant industry Maintaining the kitchen and surrounding areas in conditions that meet the company standards and health code regulations. Hiring, training and supervising kitchen staff. Assisting and directing kitchen staff in meal preparation, creation, plating, and delivery. Identifying and introducing new culinary techniques Preparing meals and completing prep support as needed. Interacts with vendors on food specifications and pricing to ensure quality products for food outlets. Writes menus, recipes, and develops new concepts for restaurants and catering events. Monitors the food offerings for freshness, quality and consistency. Resolves problems that are within the position's scope of authority and recommends courses of action to resolve problems that are beyond the scope of authority to the position supervisor. Monitors the day-to-day activities of the department(s) as subject to established company policies. Keeps position supervisor informed of relevant activities. Other duties as assigned.

REQUIRED SKILLS AND ABILITIES: In addition to the other duties described herein, each Team Member has the following responsibilities related to compliance with laws and regulations. Attend required training sessions offered by the Company. Obtain and retain required license(s). Perform the duties described in compliance with local laws and regulations. Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco. Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the Team Member's department. Have knowledge of the Property's programs to address problem gaming. Report any acts of wrongdoing of which the Team Member may have knowledge. EDUCATION AND EXPERIENCE: Culinary Degree plus five (5) years of culinary experience, or equivalent experience; or a combination of education and experience may be considered. Experience as manager or supervisor in a high-volume complex hospitality environment strongly preferred. Must have excellent PC skills; Microsoft Office. Must be knowledgeable in all employment state and federal laws and regulations. Strong analytical, written, and oral communication skills. Must be able to formulate and communicate ideas and to make independent decisions. Certificates, Licenses, and Registrations: Virginia Racing Commission License Valid Driver's License with a minimum of three (3) years driving experience.
