Sous Chef

$28 - $32 per hour

divh2Sous Chef/h2pISS offers full-time employees a variety of benefits including medical, dental, life and disability insurance, as well as a comprehensive leave program based on employment status. The hourly pay range for this position is $28.00 - $32.00./ppThe work hours for this position are Monday Friday, 11:00 am to 7:30 pm. Schedules may vary depending on business needs and overtime may be required./ppThe Sous Chef is responsible for assisting in the overall success of the food program. This entails adhering to clients culture and guidelines, OSHA, the Health Departments regulations, and Guckenheimer food quality standards./ppThis position oversees the daily operational tasks, net menus recipe execution, production sheets and pars, food purchasing, sanitation, and safety. In addition, the Sous Chef motivates, trains, develops, and directs all employees to accomplish the objectives of the operation./ppThe general responsibilities of the position include those listed below, but Guckenheimer may identify additional responsibilities of the position. These responsibilities may differ from account to account, depending on the business needs and client requirements./ph3Success Criteria/h3ulliPrioritize communication, consistency, quality, presentation, and food safety/liliKitchen organization and cleanliness provide a safe environment for all employees and guests/liliWorkplace Safety guidelines, policies, and SOPs are followed daily/liliFood Safety guidelines, policies, and SOPs are followed daily/liliHACCP guidelines, policies, and SOPs are followed daily/liliAll internal audit guidelines, policies, and SOPs are followed daily/liliGuckenheimer guidelines, policies, and SOPs are followed daily/li/ulh3Key Accountabilities/h3ulliCommunicate daily with the Executive Chef to align on catering needs and ordering/liliAlways provide the highest quality of service in accordance with ISS/Guckenheimer and client standards/liliUtilize food preparation procedures in accordance with current applicable federal, state and local guidelines and regulations to ensure high quality food service is provided/liliAssist Executive Chef with administrative duties including, attendance, human resources and all other timelines as directed/liliMonitor and review HACCP logs/liliAssemble RTE menu items in accordance with recipes, following core standards for ISS/GEI for presentation, packaging, and labels/liliClean and sanitize work areas and equipment and must follow ISS/Guckenheimer, and government regulatory rules and procedures/liliSupport management team with taking monthly inventory/liliNotify management when there are any concerns with product quantities, food/equipment safety, or any other situation that requires management attention/liliAttend all meetings of the day/liliReport all accidents and injuries in a timely manner/liliCommunicate with all team members regarding needs and the ability to support in other areas/liliSupport in other functions and/or locations as business demands/liliMay perform other duties and responsibilities as assigned/li/ulh3Food Programs/h3ulliEnsure that high quality food items, catering requests, and contracts are creative, well prepared and presented in a cost-effective manner/liliFollow Guckenheimers food standards guidelines/liliEnsure that all products and ingredients that are used are purchased following Guckenheimers purchasing standards and sustainability commitments/liliWork with the management team to ensure that all display, catering and caf service and culinary set up meet specific account standards/liliMake sure all kitchen waste is disposed of properly in the most sustainable manner as supported by the client and directed (winnow and recycle)/li/ulh3Staff/h3ulliFacilitate weekly meetings with team regarding upcoming events/liliTrain and supervise staff/liliMaintain proper uniform standards following the employee handbook and established account guidelines/liliAssist in staff reviews, coaching sessions, and disciplinary actions./liliEnsure that all trainings are complete in a timely manner and documented for direct hires/li/ulh3Customer Service/h3ulliRepresent the company in a courteous, efficient, and professional manner in all customer, client, and employee interactions/liliInteract with customers and resolve customer complaints in a friendly and service-oriented manner./liliCommunicate with the Client honestly, accurately and in a timely manner. All communication including e-mail is written in a professional and organized manner/li/ulh3Financial/h3ulliReview weekly participation, making recommendations if there is a noticeable change that may affect food budget or service levels/liliMaintain and monitor labor with business forecasts and the budget/liliEnsure that food cost meets budgetary goals each week/li/ulh3Retail/h3ulliEnsure that overall caf meets the standards, as well as oversee the daily appearance and upkeep of the Caf as directed by client/liliSupervise the proper presentation of food/liliAdhere to Guckenheimers standards of fresh and creative dcor; making sure it represents season and the food that is been served/liliEdit the daily signage for proper spelling, allergens, and descriptions/li/ulh3Physical Demands Work Environment/h3ulliCome to work properly dressed according to the dress code/liliEmployee must be able to work under pressure and time deadlines during peak periods/liliWork in a standing position for long periods of time (up to 8-10 hours)/liliReach, bend, stoop, push and/or pull, and frequently lift up to 25 pounds/liliUtilize team lift, transportation carts, and any other means of assistance when dealing with heavy loads/li/ulpHSEQ Compliance: All employees must adhere to Health, Safety, Environment, and Quality (HSEQ) policies and procedures to ensure a safe and compliant work environment. This includes following safety protocols, maintaining environmental responsibility, and upholding quality standards in all tasks.
