TheDietaryManagerisresponsibleforoverseeingthedailyoperationsoftheDietaryDepartmenttoensureresidentsreceivenutritious,appetizing,andsafemealsinaccordancewithphysicianorders,residentpreferences,regulatoryrequirements,andfacilitypolicies.TheDietaryManagersupervisesdietarystaff,managesfoodserviceoperations,maintainscompliancewithstateandfederalregulations,andpromotesapositivediningexperienceforresidents. EssentialDutiesandResponsibilities FoodServiceOperations Plan,organize,direct,andsupervisealldietarydepartmentactivities. Ensuremealsarepreparedandservedaccordingtoapprovedmenus,physicianorders,andtherapeuticdietrequirements. Monitorfoodquality,portioncontrol,presentation,andmealservicestandards. Ensureproperfoodstorage,handling,andsanitationpracticesarefollowedatalltimes. Maintainadequateinventorylevelsandoverseefoodandsupplyordering. Controlfoodandlaborcostswhilemaintainingqualityservice. ResidentCare CollaboratewiththeRegisteredDietitiantoimplementandmaintainnutritionalcareplans. Ensureresidentfoodpreferences,allergies,anddietaryrestrictionsareaccuratelyfollowed. Addressresidentandfamilyconcernsregardingfoodserviceanddiningexperiences. Promoteresidentsatisfactionthroughqualitymealserviceandcustomer-focusedcare. LeadershipandStaffManagement Recruit,train,supervise,schedule,andevaluatedietarydepartmentstaff. Conductdepartmentalmeetingsandongoingstaffeducation. Ensureadequatestaffinglevelstomeetoperationalneeds. Fosterapositiveandproductiveworkenvironment. Monitoremployeeperformanceandaddressdisciplinaryissuesasneeded. ComplianceandSafety Maintaincompliancewithallfederal,state,local,andfacilityregulations,includingCMSandhealthdepartmentstandards. Ensureadherencetoinfectioncontrol,foodsafety,andsanitationguidelines. Conductroutineinspectionsofkitchenanddiningareas. Maintainrequireddocumentation,records,andreports. Participateinfacilityqualityassuranceandperformanceimprovementinitiatives. AdministrativeResponsibilities Developandmaintaindepartmentalpoliciesandprocedures. Prepareschedules,budgets,inventoryreports,anddepartmentalrecords. Participateininterdisciplinaryteammeetingsandcareconferencesasrequired. Assistwithsurveypreparationandrespondtoregulatoryinspections. Qualifications Highschooldiplomaorequivalentrequired. CertifiedDietaryManager(CDM)certificationpreferredorrequiredperstateregulations. Minimumoftwoyearsofsupervisoryexperienceinfoodservice,healthcare,long-termcare,orhospitalitypreferred. Knowledgeoftherapeuticdiets,foodsafetystandards,andnutritionprinciples. Strongleadership,organizational,andcommunicationskills. Abilitytomanagemultipleprioritiesinafast-pacedenvironment. Proficiencywithcomputersystemsanddietarymanagementsoftwarepreferred. PhysicalRequirements Abilitytostandandwalkforextendedperiods. Abilitytoliftupto50poundsoccasionally. Abilitytoworkinkitchenenvironmentswithexposuretoheat,cold,andcleaningchemicals. Abilitytobend,stoop,reach,andperformrepetitivetasksasneeded.
