About Us

Umi is a high-volume, modern Japanese restaurant located in the heart of Buckhead. We are committed to delivering exceptional Japanese cuisine, premium ingredients, and an outstanding dining experience. We are seeking a talented and experienced Sushi Chef to join our culinary team.

Position Overview

We are looking for a skilled, detail-oriented Sushi Chef with a strong foundation in traditional Japanese sushi preparation and the ability to thrive in a fast-paced, high-volume restaurant environment. The ideal candidate takes pride in craftsmanship, consistency, presentation, and maintaining the highest standards of food quality.

Responsibilities

Prepare high-quality sushi, sashimi, nigiri, and specialty rolls with precision and consistency.
Handle, inspect, and prepare fresh fish and seafood according to proper standards.
Maintain excellent knife skills and demonstrate proper fish fabrication techniques.
Ensure beautiful presentation and consistent portion control.
Maintain a clean, organized, and sanitary sushi station.
Follow all food safety, sanitation, and health department regulations.
Work efficiently and collaboratively with the kitchen team during busy service periods.
Assist with inventory management, product rotation, and minimizing food waste.
Contribute to menu execution and uphold the restaurant’s culinary standards.

Qualifications

Previous professional sushi chef experience required.
Strong knowledge of sushi preparation, sashimi, nigiri, and Japanese culinary techniques.
Excellent knife skills and attention to detail.
Ability to work efficiently in a high-volume, fast-paced environment.
Strong commitment to food quality, cleanliness, and consistency.
Dependable, punctual, professional, and able to work as part of a team.
Availability to work evenings, weekends, and holidays as needed.
