Position Summary

The Dietary Director is responsible for the overall operation of the Dietary Department, ensuring residents receive nutritious, appealing meals that meet physician-ordered diets and regulatory requirements. This role oversees food service operations, manages department staff and budgets, and works collaboratively with clinical and administrative teams to provide an exceptional dining experience.
Key Responsibilities

• Lead all daily operations of the Dietary Department
• Ensure meals are nutritious, attractive, and prepared according to physician orders and approved menus
• Maintain compliance with all federal, state, and local dietary regulations
• Manage department budgets, food costs, inventory, and supply ordering
• Hire, train, schedule, supervise, and evaluate dietary staff
• Ensure proper food storage, preparation, sanitation, and safety practices
• Process new diet orders and maintain accurate diet information and resident records
• Conduct resident nutrition screenings and monitor food preferences and dietary concerns
• Plan special meals, holiday events, and resident dining activities
• Maintain a clean, safe, and organized kitchen environment
• Coordinate services with nursing, therapy, activities, and other departments
• Participate in Quality Assurance (QA) and interdisciplinary team meetings
• Provide ongoing education and training for dietary staff
• Conduct regular inspections to ensure quality, sanitation, and safety standards are met
• Maintain resident confidentiality and HIPAA compliance
• Collaborate with the consulting Dietitian regarding menus, nutritional concerns, and dietary services

Qualifications

Candidates must meet at least one of the following requirements:

• Certified Dietary Manager (CDM)
• Certified Food Service Manager
• Nationally recognized certification in food service management and safety
• Associate's degree or higher in Food Service Management, Hospitality, or a related field that includes food service or restaurant management coursework
• Two or more years of experience as a Dietary Director in a nursing facility plus completion of a course of study in food safety and management

Preferred Skills

• Long-term care or healthcare dietary management experience
• Strong leadership and team development skills
• Knowledge of therapeutic diets and nutrition regulations
• Experience with budgeting, inventory control, and staffing
• Excellent communication and customer service abilities
• Strong organizational and problem-solving skills
