Assistant Food & Beverage Manager

The Assistant Food and Beverage Manager supports the daily operations of the Food and beverage departments, ensuring exceptional service and dining. Working closely with the F&B Manager, this position oversees operations, manages staff, maintains compliance with health and safety standards, and contributes to the department's financial success. KEY RESPONSIBILITIES (Other Duties May Be Assigned) Assist the F&B Manager in overseeing all aspects of food and beverage operations, including restaurants, bars, banquets, and special events. Supervise and support F&B staff, providing training, guidance, and performance evaluations to ensure high service standards. Ensure compliance with health, safety, and sanitation regulations, maintaining a clean and safe work environment. Monitor inventory levels, place orders, and manage cost‑effective operations without compromising quality. Collaborate with the kitchen team to ensure timely and accurate food delivery. Address customer inquiries and concerns, resolving any issues promptly. Assist with inventory management, budgeting, forecasting, and financial analysis to ensure profitability and cost control. Collaborate with other departments to support events, promotions, and activities involving food and beverage services. Manage recruitment, scheduling, and staffing to ensure proper coverage and efficient operations. Complete daily, weekly, and monthly administrative duties, including hiring, training, sales tracking, labor tracking, payroll, deposits, inventories, ordering, and P&L accounting. Ensure food and beverage areas meet health and safety guidelines. Oversee safe operation of equipment and enforce safety protocols. Administer and enforce internal cash controls and procedures. Uphold standard operating policies (SOPs), Minimum Internal Control Standards (MICS), and Missouri Gaming Commission regulations. Must be flexible to work nights, weekends, and holidays as required. SUPERVISORY RESPONSIBILITIES Interview, hire, train, and manage employees in compliance with company policies. Plan, assign, and direct work; appraise performance; reward and discipline employees. Address employee concerns and resolve issues promptly. QUALIFICATIONS To perform this job successfully, an individual must satisfactorily perform each essential duty. The requirements below represent knowledge, skill, and/or ability. EDUCATION / EXPERIENCE High school diploma or equivalent is required; a Bachelor’s degree in Hospitality Management or a related field is a plus. Previous experience in food and beverage management, preferably in a hospitality or casino environment. CERTIFICATES AND LICENSE Must be able to obtain and maintain a Missouri Gaming Commission License. A valid Driver's License is required. SKILLS & COMPETENCIES Strong communication skills in English, both verbal and written. Proficiency in basic math and Microsoft Office; experience with F&B management software is preferred. Excellent interpersonal skills with a customer‑focused attitude. Strong problem‑solving abilities and the capacity to excel in a fast‑paced environment.
