Job Overview CHICA at The Venetian in Las Vegas, opened in 2017, offers Latin cuisine with a dynamic wine and mixology program. The position is for Sous Chef. Responsibilities Manage culinary functions to meet food quality goals, financial targets, facilities maintenance, and personnel development objectives. Ensure food quality and presentation meets standards, oversee preparation, execution, and training of staff on menu items. Conduct service education through daily line‑ups, quarterly menu meetings, and new server training; ensure timely food production (tickets within twenty minutes). Meet financial objectives while maintaining quality and service; report issues that affect financial goals. Maintain kitchen cleanliness and supervise daily cleaning of pantry, cooking line, prep kitchen, dish area, stairs, walk‑in, and prep area. Assist the General Manager in supervising kitchen employees, hiring, training, planning, directing work, evaluating performance, and resolving issues. Handle a high‑noise environment, frequent standing, bending, walking, handling lifts up to 50 lbs. Qualifications and Competencies Degree in Culinary Arts or related field. Food Safety/Manager Certification. Proficiency in culinary arts, food product presentation, quality, and preparation; menu concept and design. Ability to read and interpret safety rules, procedures, operating and maintenance instructions. Strong written and oral communication skills in English. Strong math skills: add, subtract, multiply, divide in all units of measure; compute rate, ratio, percent. Problem‑solving abilities in varied and limited standardization scenarios. Strong interpersonal and customer service skills; professional appearance and demeanor. Experience managing high‑volume kitchen staff and training staff. Requirements Excellent verbal and written communication skills. Excellent critical thinking and decision‑making skills. Maintain tact and composure under pressure. Work flexible hours, including off hours, weekends, and holidays. Highly motivated, energetic personality; initiative and flexibility. Professional appearance and demeanor. Work Conditions Noise level usually loud. Frequent standing, bending, walking, use of hands and arms; may lift up to 50 lbs.
