Director of Sourcing & Sustainability

Quince & Co. is seeking a Director of Sourcing & Sustainability to lead ingredient procurement, producer relationships, and sustainability initiatives across our restaurant group.

This is a rare opportunity to sit at the intersection of farm, kitchen, and business for one of America's most respected restaurant groups. Reporting to Michael and Lindsay Tusk, the Director of Sourcing & Sustainability will help shape what arrives in our kitchens each day and, ultimately, what appears on our menus each night.

The role oversees sourcing across Quince (Three Michelin Stars and a Michelin Green Star), Cotogna,Verjus and Fresh Run Farm, our 240-acre certified organic farm in Bolinas. We are looking for someone who is as comfortable discussing varietals, seasonality, and regenerative agriculture with a farmer as they are reviewing food costs, negotiating supplier contracts, and building systems that support a growing organization.

• Lead sourcing and purchasing across all Quince & Co. concepts
• Develop and maintain relationships with farmers, ranchers, fishermen, foragers, and artisan producers
• Partner closely with culinary leadership on ingredient selection, product evaluation, and seasonal menu development
• Coordinate weekly tastings and supplier reviews with chefs
• Identify and cultivate new producer relationships throughout California and beyond
• Oversee specialty and imported sourcing, including products from Italy, France, Japan, and other key culinary regions
• Support whole-animal utilization programs and responsible sourcing initiatives
• Steward and advance the sustainability practices that support Quince's Michelin Green Star designation
• Track food costs, purchasing trends, vendor performance, and sourcing opportunities across the group
• Negotiate pricing and contracts while maintaining uncompromising quality standards
• Collaborate with Fresh Run Farm and restaurant leadership on seasonal planning and procurement strategies
• Support culinary R&D projects, preservation programs, guest gifting initiatives, and special events
• Educate culinary and front-of-house teams on products, producers, and sourcing philosophy

You have a deep appreciation for exceptional ingredients and understand the relationships, systems, and discipline required to source them consistently.

You may come from a Michelin-starred kitchen, a specialty food distributor, a farm or producer operation, a culinary operations role, or a hospitality organization with a strong focus on sustainability and sourcing.

The ideal candidate brings:

• 5+ years of experience in sourcing, purchasing, culinary operations, or related fields
• Strong understanding of seasonality, agriculture, artisan production, and ingredient quality
• Experience managing vendor relationships and negotiating pricing agreements
• Financial acumen, including food cost management, budgeting, and purchasing analysis
• Exceptional organizational and project management skills
• Passion for sustainability, regenerative agriculture, and responsible sourcing
• The ability to build relationships across culinary, operational, and producer communities
