FUNCIONES ESENCIALES DEL PUESTO:

Ser parte del equipo de Nine Orchard en todos los aspectos relacionados con los alimentos, entre otros. Aprender y crecer como cocinero y continuar el camino para convertirse en chef. Ser un representante de nuestros valores fundamentales y aplicarlos para ser la mejor persona posible.

El Cocinero de Línea PM es responsable de preparar y cocinar alimentos de acuerdo con las recetas y estándares de la cocina. Este puesto requiere sólidas habilidades culinarias, atención al detalle y la capacidad de trabajar eficientemente en un ambiente dinámico y de ritmo acelerado. Trabajará en estrecha colaboración con otros miembros del equipo de cocina para garantizar una operación fluida y eficiente.

  • Habilidades básicas de cocina.
  • Buen juicio y conocimiento de las operaciones de cocina.
  • Experiencia en un entorno de alto volumen y ritmo acelerado, y capacidad para realizar múltiples tareas y trabajar bajo presión manteniendo la atención al detalle y una actitud profesional y amable.
  • Buenas habilidades organizativas y gran atención al detalle.
  • Capacidad para leer, escribir y hablar inglés con fluidez.

RESPONSABILIDADES CLAVE:

  • Mantener los estándares de marca y servicio de Nine Orchard.
  • Participar activamente y asumir responsabilidad en la educación continua y el desarrollo del oficio y los elementos de hospitalidad.
  • Tener amplio conocimiento del menú y de las alergias alimentarias.
  • Mantenimiento de la estación de cocina.
  • Asegurar que la estación esté preparada de acuerdo con los estándares de la empresa y del Departamento de Salud.
  • Asegurar que la estación esté completamente abastecida y lista para los eventos.
  • Garantizar que la limpieza de la estación se mantenga continuamente antes, durante y después de los eventos.
  • Mantener relaciones profesionales con todo el equipo.
  • Garantizar la calidad y consistencia del producto, tanto en la recepción como en la producción.
  • Investigar y aprender sobre tendencias actuales de alimentos para contribuir a la conversación sobre nuevos platillos junto con el chef de cuisine y los sous chefs.
  • Mantener el nivel de calidad de los alimentos esperado en Nine Orchard.
  • Comunicarse de manera efectiva con el chef de cuisine, sous chefs y compañeros de trabajo.
  • Preparar todos los platillos del menú de su estación, seguir las recetas con precisión y comprender el mise en place.
  • Mantener los cuchillos bien afilados.
  • Mantener el conocimiento del menú y atención al detalle en la presentación de los platillos.
  • Utilizar de forma segura todo el equipo de cocina. Mantener conocimiento completo del uso correcto y mantenimiento del equipo.
  • Transportar ollas y sartenes vacíos/sucios al área de lavado y organizarlos mientras lo hace.
  • Mantener los procedimientos adecuados de almacenamiento según los requisitos del Departamento de Salud.
  • Utilizar técnicas adecuadas de manipulación de alimentos siguiendo los estándares de salud y seguridad.
  • Desmontar la estación de trabajo y completar las tareas de cierre, devolviendo todos los alimentos consolidados a las áreas de almacenamiento correspondientes.
  • Tener deseo de aprender y crecer.
  • Apoyar la cultura de la empresa utilizando los principios rectores.

FUNCIONES DE APOYO:

Además del desempeño de las funciones esenciales, este puesto puede requerir una combinación de las siguientes funciones de apoyo, y el porcentaje de tiempo dedicado a cada función será determinado exclusivamente por el gerente según las necesidades particulares del negocio:

  • Participar como miembro del equipo junto con otros miembros clave, incluyendo tomar mesas, participar en eventos dentro y fuera del establecimiento y contribuir creativamente.
  • Funciones adicionales según sea necesario y asignado.

DEMANDAS FÍSICAS:

Mientras desempeña estas funciones laborales, el empleado deberá regularmente ver, hablar, escuchar y alcanzar objetos. También deberá sentarse, caminar y permanecer de pie durante largos períodos de tiempo. Se requiere coordinación manual para agarres simples, empujar/jalar y manipulación fina.

El empleado también deberá levantar y cargar hasta 50 libras, agacharse, ponerse en cuclillas, arrodillarse y alcanzar objetos por encima del nivel de los hombros.

ROLE: PM Line Cook - All Positions 
EMPLOYMENT CLASSIFICATION: Non-Exempt
REPORTS TO: Executive Chef, Executive Sous Chef, Sous Chefs

ESSENTIAL JOB FUNCTIONS: To be a part of the Nine Orchard team in all facets related to but not limited to food. To learn and to grow as a cook and continue the journey to becoming a chef. To be a steward of our core values and apply them to be the best person you can be. The PM Line Cook is responsible for preparing and cooking food items according to recipes and standards of the kitchen. This role requires strong culinary skills, attention to detail, and the ability to work efficiently in a fast-paced environment. You will work closely with other kitchen staff to ensure a smooth and efficient operation.

KEY KNOWLEDGE SKILLS ABILITIES: The individual must possess the following knowledge skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job with or without reasonable accommodation:

  • Basic cooking skills.
  • Sound judgment and knowledge of kitchen operations.
  • Experience in a fast-paced high-volume environment and ability to multi-task and work under pressure while still being detail oriented and personable.
  • Good organizational skills as well as strong attention to detail.
  • Ability to read, write, and speak proficient English.

KEY RESPONSIBILITIES:

  • Maintain Nine Orchard Brand Standards for service
  • Active engagement and ownership in continuing education and development of the craft and elements of hospitality
  • Great menu knowledge as well as allergies
  • Kitchen Station Maintenance
    • Ensure station is set in accordance to the company and DOH standards
    • Ensure the station is fully stocked and ready for the events.
    • Ensure station cleanliness is maintained continuously before, during, and after the events
  • Maintain professional relationships with the entire team 
  • Ensures product quality and consistency, both in receiving and in production
  • Research and learn about current food trends to contribute to the conversation of new menu items with the leadership of the chef de cuisine and sous chefs
  • Maintain the level of food product quality expected at Nine Orchard.
  • Communicates effectively with chef de cuisine, sous chefs, and co-workers 
  • Prepares all menu items on your station, follows recipes precisely, and understands mise-en-place
  • Keeps Knives well sharpened.
  • Maintain menu knowledge and attention to detail with plate presentation
  • Safely uses all kitchen equipment. Maintain complete knowledge of correct maintenance and use of equipment
  • Transport empty/dirty pots and pans to the pot wash station and organizes while doing so
  • Maintain proper storage procedures as specified by the Department of Health requirements.
  • Utilizes proper food handling techniques following health and safety standards
  • Breakdown work-station and complete closing duties return all consolidated food items to the proper storage areas
  • Desire to learn and grow
  • Support the company’s culture using guiding principles

SUPPORTIVE FUNCTIONS: In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions with the percentage of time performing each function to be solely determined by the manager based upon the particular requirements of the business:

  • Participate as a team player with other key team members including taking tables, participating in on-site and off-site events and creative contribution.
  • Additional duties as necessary and assigned

PHYSICAL DEMANDS: While performing these job duties, the employee is regularly required to see, talk, hear, and reach. The employee is regularly required to sit, walk, and stand for long periods of time. The employee is required to use dominant hand coordination for simple grasping, pushing/pulling, and fine manipulation. The employee is also required to lift and carry up to 50 pounds, bend, squat, kneel, and reach above shoulder level. The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of the job.
