Pastry Sous Chef
We are seeking a creative and experienced Pastry Sous Chef with administration responsibilities to help lead our pastry department. The ideal candidate is deeply passionate about pastry arts, has a keen eye for detail, and a strong background in creating exquisite desserts and pastries. As a Pastry Sous Chef, you will work closely with our Executive Pastry Chef to oversee the production of high-quality desserts, bread, cakes and pastries. In addition, you will take on administrative duties to support the smooth operation of the kitchen. Additionally, please include a portfolio or photos of your pastry creations if available.
Pay Rate: The rate of pay listed on job boards are auto-generated numbers. Kiawah Island Golf Resort's actual rate of pay will be determined during the hiring process.
Qualifications:
- Proven experience as a Pastry Sous Chef or similar role in a high-end restaurant or pastry shop.
- Extensive knowledge of pastry techniques, dessert presentation, and baking.
- Strong leadership and team management skills.
- Excellent organizational and time-management skills.
- Knowledge of food safety and sanitation regulations.
- Banquets experienced required.
- A passion for delivering exceptional pastry experiences to guests.
- Willingness to work a flexible schedule, including evenings, weekends, and holidays.
- Strong administrative and organizational skills.
Expectations & Responsibilities:
- Collaborate with the Executive Pastry Chef to plan and execute dessert menus.
- Oversee the day-to-day operations of the pastry department, including managing a team of pastry cooks.
- Train and mentor junior pastry staff to ensure consistency and excellence in execution.
- Maintain high standards of food quality, presentation, and taste.
- Monitor inventory levels and assist in ordering pastry-related supplies.
- Ensure compliance with food safety and sanitation standards.
- Assist the Executive Chef in the creation, costing and implementation of outlets, banquets, seasonal and special menus.
- Contribute to maintaining a positive and collaborative work environment.
- Manage kitchen scheduling and staff assignments across multiple outlets.
- Manage associates in scheduling, training, developing, coaching and counseling, conducting reviews. Also focus on attracting, interviewing, retaining and motivating the associates while providing a safe work environment.
- Maintain accurate records of recipe development, ingredient usage, and costing.
- Coordinate with other departments for kitchen-related logistics.
- Handle paperwork, including invoices, receipts, and other administrative tasks.
- Implement and maintain kitchen policies and procedures.
- All other duties as assigned.
Essential Physical Requirements:
- Ability to stand for the entirety of a shift.
- Ability to reach, bend and stoop frequently.
- Must be able to carry 50 lbs. about ten times per shift over a medium distance.
- Must be able to work on site daily
