Bar Manager

POSITION PURPOSE:

The Bar Manager is responsible for overseeing the daily operations of the bar while ensuring the highest standards of beverage quality, service, hospitality, and member satisfaction consistent with Casa Cipriani standards.

The Bar Manager provides hands-on leadership to the bar team, ensuring a polished and efficient operation while maintaining strong knowledge of spirits, wine, cocktails, beverage trends, inventory management, cost controls, and responsible alcohol service.

This position works closely with Food & Beverage leadership and other departments to deliver a seamless experience for members and guests while maintaining the operational and financial performance of the bar.

ESSENTIAL FUNCTIONS AND DUTIES:

• Oversee the daily operation of the bar and ensure service is executed according to Casa Cipriani standards.
• Maintain a visible and active presence during service, supporting the bar team and ensuring an exceptional experience for members and guests.
• Ensure consistent execution, presentation, quality, and appropriate service of all cocktails, spirits, wines, beers, and non-alcoholic beverages.
• Maintain extensive knowledge of classic and contemporary cocktails, premium spirits, wines, beers, ingredients, preparation methods, and current beverage trends.
• Lead, supervise, coach, and develop bartenders, barbacks, and other assigned team members.
• Conduct pre-shift meetings and communicate daily business levels, events, VIPs, member preferences, menu updates, service expectations, and operational priorities.
• Provide ongoing training and education to the bar team regarding beverage knowledge, recipes, proper techniques, steps of service, product knowledge, responsible alcohol service, and Casa Cipriani standards.
• Ensure all recipes, specifications, portions, presentation standards, and service procedures are followed consistently.
• Monitor member and guest experiences throughout service and respond promptly and professionally to requests, concerns, and feedback.
• Develop strong relationships with members and guests while maintaining the discretion, professionalism, and personalized service expected within a luxury private members club environment.
• Assist Food & Beverage leadership with the development and implementation of cocktail menus, seasonal offerings, beverage activations, and other programming as appropriate.
• Remain knowledgeable of evolving beverage industry trends and identify opportunities to enhance the beverage experience while remaining consistent with the Casa Cipriani identity.
• Oversee beverage inventory, ordering, receiving, storage, requisitions, transfers, and appropriate par levels.
• Conduct and/or oversee regular beverage inventories and maintain accurate inventory records.
• Monitor beverage costs, product usage, waste, breakage, comps, voids, and variances and take appropriate corrective action when necessary.
• Assist in achieving established beverage revenue, cost-of-sales, labor, and profitability objectives.
• Maintain appropriate controls for liquor, wine, beer, mixers, garnishes, glassware, equipment, and other bar-related supplies.
• Maintain positive and professional relationships with beverage vendors and suppliers and assist with product selection and purchasing as required.
• Ensure all bar areas, service stations, storage areas, equipment, glassware, tools, and supplies are maintained in excellent condition and properly organized.
• Ensure opening and closing procedures are completed thoroughly and consistently.
• Review business levels, reservations, events, and operational needs to ensure appropriate staffing and preparation for service.
• Assist with preparation of schedules and staffing adjustments according to business needs while maintaining appropriate labor controls.
• Participate in the recruitment, interviewing, onboarding, training, coaching, performance management, and development of bar employees.
• Ensure employee attendance, appearance, grooming, conduct, and performance comply with Casa Cipriani policies and standards.
• Foster a professional, respectful, collaborative, and service-driven work environment.
• Work closely with Restaurant Management, Culinary, Events, Membership, and other departments to ensure seamless execution of daily service, private events, special programming, and high-profile member experiences.
• Communicate effectively with management regarding operational needs, maintenance issues, product availability, staffing concerns, member feedback, and other matters affecting service.
• Ensure compliance with all applicable federal, state, and local regulations relating to health, sanitation, safety, and the responsible service of alcoholic beverages.
• Ensure established sanitation, cleanliness, food safety, and workplace safety procedures are followed at all times.
• Monitor and maintain required documentation and certifications related to bar operations and alcohol service.
• Complete administrative responsibilities including inventories, reports, scheduling, payroll review, purchasing documentation, operational checklists, and other required records accurately and within established deadlines.
• Perform opening, closing, manager-on-duty, and other operational responsibilities as assigned.
• Perform additional duties as required to support the operation and ensure the highest level of member and guest satisfaction.

KNOWLEDGE, EXPERIENCE AND SKILLS:

• Minimum of 3-5 years of progressive experience in bar, beverage, or Food & Beverage operations, preferably within a luxury hotel, private members club, fine-dining restaurant, or other high-end hospitality environment.
• Previous supervisory or management experience required.
• Extensive knowledge of spirits, wine, beer, classic and contemporary cocktails, beverage preparation, and elevated bar service.
• Strong understanding of beverage inventory management, purchasing, cost of sales, portion control, waste management, and other financial controls.
• Demonstrated ability to lead, motivate, train, and develop a high-performing hospitality team.
• Strong understanding of luxury service standards and the ability to anticipate and respond to member and guest needs.
• Excellent interpersonal and communication skills with the ability to interact professionally and discreetly with members, guests, employees, vendors, and leadership.
• Ability to maintain composure, professionalism, and sound judgment in a fast-paced and high-volume environment.
• Highly organized with strong attention to detail and the ability to manage multiple priorities simultaneously.
• Strong problem-solving skills and the ability to address operational and service challenges effectively.
• Knowledge of POS systems and proficiency with standard business applications.
• Working knowledge of applicable health, sanitation, safety, and alcohol-service regulations.
• Ability to work collaboratively with Food & Beverage leadership, Culinary, Events, Membership, and other departments.
• Professional appearance and demeanor consistent with Casa Cipriani grooming and presentation standards.
• Must be flexible and able to work varying schedules based on business demands, including evenings, weekends, holidays, and special events.

PHYSICAL ACTIVITIES AND REQUIREMENTS OF THIS POSITION:

• Ability to stand and walk for extended periods of time throughout the shift.
• Ability to work for prolonged periods involving walking, bending, reaching, and repetitive motions.
• Ability to move efficiently throughout bar, restaurant, storage, and service areas in a fast-paced hospitality environment.
• Ability to bend, stoop, reach, push, pull, and perform other physical movements necessary for bar and restaurant operations.
• Ability to lift, carry, and move items weighing up to 50 pounds when necessary.
• Must use proper lifting techniques and follow established ergonomic and workplace safety practices.
• Ability to work in environments that may include varying temperatures, noise levels, crowds, and periods of high activity.
