Sodexo Campus Services is seeking a creative, detail oriented, highly-motivated, energetic and well organized Executive Chef 2 for the University of The Incarnate Word located in San Antonio, TX. Position provides culinary leadership within a medium-sized account including menu planning, brand standards and program execution, and staff management and training.

Key Duties

• Implements and coordinates the culinary function
• Directs, trains, develops and mentors cooks and other culinary support, stock worker and receiver, and utility workers
• Ensures food preparation, production and post production meet operational standards
• Manages culinary operations for catering, retail, and concessions
• Customer and client satisfaction
• Financial management to include food costs, inventory, and labor
• Manages food and physical safety programs for resident dining operations
• Works with maintenance department to help keep all equipment running well

What You'll Do

• Be responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting
• Ensure Sodexo Culinary standards including recipe compliance and food quality are implemented
• Have the ability and willingness to develop and motivate team members to embrace culinary innovations
• Ensure food safety, sanitation and workplace safety standard compliance
• Have working knowledge of automated food inventory, ordering, production and management systems
