Lead Pastry Cook

Merzbacher's is a wholesale bread bakery in Germantown, Philadelphia. We make bread meant to be shared, priced so people can actually eat it every day. Our bread shows up in restaurants, grocery stores, and community spaces across the region.

We recently took over the wholesale bread operation of Metropolitan Bakery and brought it under one roof. That more than doubled our business overnight. It's an exciting time and it puts real pressure on our systems. We're building the operation that can carry both names well.

Pastry is a small part of that right now. We want it to be a real part. That's where you come in.

You run the pastry program. That means baking a focused line every week... brownies, cookies, breakfast muffins, granola, lemon bars, raspberry bars, fig bars, and whatever we add next. Same quality every time, on a schedule the packing team can count on.

Some of these are legacy items that came over with Metropolitan. People love them. Leave them alone. Others have low sales and haven't been looked at in 20+ years. Those need to be better, and figuring out how is your job.

You also develop new items, write the SOPs, track your own inventory, and place your own orders. You decide the production plan. You deliver finished product ready for packing and distribution.

Pastry isn't quite a full-time job yet. When it's slow you'll help out on the bread bench. The goal is to grow pastry until it fills your week, and we want that to happen as soon as possible. Nobody is going to tell you what to do every morning. It's yours to build.

Full time, five days a week, roughly 8 hours a shift. Which days depends on production needs and the bakery schedule. We'll figure that out together.
