An iconic San Francisco fine-dining restaurant seeks an experienced Chef de Cuisine. The ideal candidate brings a career grounded in high-volume fine-dining kitchens with a focus on seasonal French and Italian cookery. Strong multitasking, interpersonal, and communication skills are essential, along with a proven ability to develop people and culture. Candidates must demonstrate a solid culinary foundation, genuine passion for food and the guest experience, and hands-on experience with kitchen cost controls. Creativity paired with an unwavering commitment to excellence is required. This role reports directly to the Executive Chef and supervises the Sous Chef and kitchen team.

Description

The Chef de Cuisine collaborates with the Executive Chef to oversee all culinary operations for a 100-seat bar and dining room plus a robust private-dining program. The position continually improves guest satisfaction through exceptional food quality and consistent kitchen standards. Together with the Executive Chef and Sous Chef, the Chef de Cuisine ensures sanitation and food-safety protocols are maintained at all times.

Key Responsibilities

• Collaborate on menu development and seasonal updates
• Support the Executive Chef in managing food cost, labor cost, and overall expenditures
• Recruit, hire, train, and supervise kitchen staff
• Maintain food quality and consistency across all stations
• Oversee daily and weekly purchasing
• Direct food-preparation standards and execution

Additional Responsibilities

• Assist the Executive Chef in leading the kitchen team
• Provide clear direction for day-to-day operations
• Support inventory management
• Participate in monthly financial review meetings
• Uphold and reinforce brand and culinary standards
• Train staff on new cooking techniques and equipment
• Emphasize consistency in preparation and plate presentation
• Address and resolve guest concerns promptly
• Maintain thorough knowledge of food-handling and preparation techniques
• Enforce quality, portion control, and presentation standards

Qualifications

• Minimum 5 years of Chef de Cuisine experience in high-volume fine-dining kitchens preferred
• Demonstrated expertise in local, seasonal French and Italian cookery
• Culinary Arts degree or equivalent professional training and experience
• Prior culinary management experience in restaurants generating $5 million+ in annual sales
• Knowledge of private-dining operations
• Proven ability to teach, coach, and inspire kitchen teams
• Flexible availability for days, nights, weekends, and holidays as required

Job Type: Full-time

Compensation: $95,000 – $110,000 per year
