The Role We are seeking a passionate and driven Sous Chef to join the culinary leadership team at Millennium Hall. As the second-in-command in the kitchen, the Sous Chef plays a vital role in maintaining the daily flow of operations, upholding high food quality and safety standards, and supporting the Executive Chef in all aspects of back‑of‑house management. This role requires a strong leader who can motivate the team, ensure cleanliness and consistency, and help drive the success of a high‑volume kitchen in a fast‑paced, seasonal environment. Responsibilities Support the Executive Chef in day‑to‑day kitchen operations, ensuring smooth and consistent line service Supervise and train kitchen staff to meet performance and quality expectations Oversee cleanliness, organization, and sanitation of the kitchen at all times Assist with inventory management, ordering, and cost control Uphold food safety standards and company sanitation protocols Monitor food quality, taste, and presentation to ensure consistency Collaborate with FOH leaders and Event Managers on special menus and service coordination Contribute to menu development, pricing, and implementation Attend weekly management meetings and actively participate in team planning Assist with food and supply purchasing, ensuring quality and cost‑efficiency Enter invoices and participate in weekly inventory procedures Qualifications Minimum of 2 years of experience as a Sous Chef or in a comparable leadership role Strong understanding of kitchen operations, food safety, and sanitation practices Proven ability to lead and develop a team in a high‑volume kitchen environment Solid grasp of food costing, inventory systems, and vendor relations Ability to maintain composure and consistency in a fast‑paced service setting Excellent communication, organizational, and problem‑solving skills Experience with BOH software and ordering platforms preferred Food Safety Manager certification (or ability to obtain) required What We Offer The opportunity to work in a high‑energy, seasonal downtown Chicago restaurant Competitive salary: $65,000 annually, based on experience A dynamic work environment, both indoors and outdoors, with beautiful city views Paid time off/sick leave and discounted meals Growth opportunities within Vandalay Brands How to Apply Apply online at: Fill out your first and last name, email address, select 'BOH General' for the position, and upload your resume. #J-18808-Ljbffr Vandalay Brands
