Chef de Partie

Ikigai is a Japanese fine dining restaurant in Fort Greene, near Barclays Center and BAM. In a large, beautiful, newly constructed space, we serve a kaiseki tasting menu to 12 guests at a time (144 covers per week) with Michelin-level execution.

We are hiring a Chef de Partie to join our small team. This is a senior cook position: you will own your station from prep through plating and be held to a high standard on every course. Because of our counter format, everyone on the team, Chefs de Partie included, takes part in all aspects of service, including presenting and serving dishes to guests.

Requirements:

• Available for full-time work
• Experience with Japanese cuisine
• 2+ years in fine dining kitchens
• Strong knife skills, including fish butchery
• Comfortable speaking with guests

Responsibilities:

• Own your station: prep, mise en place, cooking, and plating
• Handle butchery and precise prep work
• Cook and plate menu items alongside the chefs
• Keep your station stocked and ingredients in order
• Run dishes and present them to guests
• Set up the line with equipment, plateware, and smallwares
• Maintain the highest level of food quality and consistency
• Take part in closing duties and kitchen cleanliness
