Executive Chef Brookdale is seeking an Executive Chef who is passionate about exceptional dining, team leadership, and creating memorable experiences for residents at one of Corpus Christi’s premier senior living communities. Responsibilities: Oversee daily kitchen operations and maintain the highest quality food products. Directly supervise, train, and develop kitchen personnel on all culinary activities. Supervise breakfast, lunch, and dinner for quality assurance of meal presentation and portion control. Select recipes, prepare and coordinate all meals, and plan the next day’s menu. Create new dishes, develop recipes, and standardize to ensure consistent quality. Hold a pre‑meal meeting with food servers to review daily menu details. Ensure adequate staffing and cover absences during each shift. Estimate food consumption, requisition purchases, and monitor inventory. Assist in maintaining budget compliance for daily food costs. Apply loss‑prevention procedures. Assist in hiring, training, scheduling, disciplining, and terminating associates; provide staff training. Co‑ordinate and execute special events. Maintain kitchen cleanliness and food preparation per state and local health department codes; keep equipment in working order; manage cleaning chemicals and waste reduction. Qualifications Education and Experience Associate’s degree (A.A.) or equivalent from a two‑year college or technical school. Two to four years of related experience and/or training; or an equivalent combination of education and experience. Certifications, Licenses, and Other Requirements ServSafe Certified. Obtain and maintain any required local, state, and/or county food handling or sanitation licenses and/or certificates. Management and Decision Making Apply existing guidelines and procedures to make varied decisions within the department; use sound judgment and experience to solve moderately complex problems. Knowledge and Skills Extensive knowledge of culinary disciplines and functional areas. Effective customer service skills, ability to lead and supervise a diverse team. Coordinate daily menu production, recipe development, and food preparation. Manage multiple tasks simultaneously, including preparing various foods concurrently. Excellent cooking skills and understanding of food preparation principles, ingredients, and culinary terminology. Create healthy and satisfying menus with innovative recipes. Apply sanitation principles and industry best practices. Physical Demands and Working Conditions Standing, walking, sitting, using hands and fingers, reaching, lifting up to 50 pounds. Interaction with coworkers, residents, and vendors. Occasional weekend, evening, or night work to ensure shift coverage. Possible exposure to communicable diseases, latex, chemicals, blood‑borne pathogens, and hazards. Ability to climb, balance, stoop, kneel, crouch, crawl, talk, hear, taste, and smell. Exposure to visible hazards such as burns, cuts, odors, or falls.
