Kitchen Manager

As Kitchen Manager at an Edith's Sandwich Counter, you will act as the leader of the kitchen, overseeing day-to-day kitchen and prep operations, managing and scheduling staff, ensuring food quality and consistency, acceptable ticket times, developing menus, controlling food costs, placing orders, and maintaining high standards of sanitation and safety, all while assisting the General Manager in leading the store and reporting to the BOH Operations Director.

Job Responsibilities:

• Leadership and Supervision:
• Manage and supervise all kitchen staff including line cooks and prep cooks
• Train and develop culinary staff, providing coaching and performance evaluations. 
• Assign tasks and responsibilities to kitchen staff based on skill level and workload. 
• Ensure adherence to all kitchen policies, procedures, and safety standards. 
• Food Quality:
• Monitor food quality and consistency, ensuring dishes (including specials) are prepared according to recipe standards 
• Conduct line and taste tests and make adjustments to recipes as needed 
• Cost Control and Inventory Management:
• Oversee food purchasing and receiving processes, ensuring the company’s quality and cost-effectiveness goals are always met
• Manage inventory levels to minimize food waste and maintain proper stock rotation 
• Analyze food costs and identify areas for cost reduction 
• Kitchen Operations Management:
• Oversee daily kitchen operations, including scheduling staff, placing food orders, managing prep production schedule, and coordinating with other departments to ensure the store can execute to maximum volume capacity efficiently and without diminishing quality 
• Address any operational issues that arise in the kitchen promptly and efficiently 
• Maintain a clean and sanitary kitchen environment, adhering to all health and safety regulations 
• Communication and Collaboration:
• Communicate effectively with the CEO, General Manager, front-of-house staff, and other departments to ensure smooth service 
• Provide feedback to store and company leadership on kitchen operations and staff performance 
• May participate in culinary events or special catering projects as needed
