How You Will Create the Extraordinary Supervises the preparation of food in Hell's Kitchen area. Performs frequent checks of assigned food preparation areas and assists in food production when volume requires. Assists in the maintenance of prescribed standards for quality, quantity and appearance of food prepared in assigned food preparation area through effective guidance, counseling, and instruction of assigned personnel. Assigns stations and breaks for subordinate personnel and directs their work activity. Maintains an adequate supply of food stock for the needs of assigned kitchens; controls ordering to eliminate waste; and keeps sanitary conditions at acceptable standards. Encourages cooperation between assigned food preparation personnel and food service personnel to ensure quick and efficient service from the kitchen. Maintains facilities and equipment in clean and operable condition. Performs inspections of assigned areas as directed. Prepares and presents periodic performance appraisals of assigned personnel. Counsels, coaches, and guides assigned personnel in the performance of their duties. Spends time interviewing, training, and selecting employees. Conducts performance reviews. Makes or recommends wage increases. Makes or recommends promotions. Provides for safety and security. Handles employees' complaints or grievances. Recommends disciplinary action or disciplines employees. Monitors legal compliance with federal, state, and gaming laws. What You Will Need Two-year culinary degree preferred. Minimum of four years food preparation in a high volume establishment. Ability to coordinate multiple tasks. Ability to implement strategic vision and plans into day-to-day operations. Must demonstrate supervisory skills. Additional Requirements Must be able to maneuver to all areas of the kitchen and food service areas. Must be able to tolerate areas with high, humid temperatures more than 115 degrees. Must be able to tolerate chemicals for cleaning and sanitizing kitchen areas. Must be able to lift items up to 75 pounds. Must be able to push, pull, reach, bend, twist, stoop, and stack. Must be able to work at a fast pace and in stressful situations. Must be willing to work long hours and any shift. Salary: Starting at $65k per year, depending on experience. Preference is given to qualified Rincon tribal members and members of other federally recognized tribes.
