Position Description: Responsible for properly preparing various types of Sushi and ensuring all presentations are aesthetically appealing and adhere to the Jeff Ruby standard of quality. Create high-quality sushi including cooking rice, rolling sushi, and temperature recording. Assist Sushi Chef as directed. Assist Raw Bar as needed. Work Performed: Practice, regulate, and communicate production and prep operations. Maintain positive Guest relations at all times. Ensure Guests have a pleasurable, exciting, and satisfying experience. Resolve Guest complaints to ensure satisfaction. Anticipate Guest needs, respond, acknowledge, and interact with Guests, even during busy times. Maintain menu knowledge and attention to detail in plate presentation. Engage with FOH staff and assist with special requests and questions. Have solid knowledge of seafood and food products, and apply culinary techniques skillfully. Apply comprehensive knowledge of all cooking techniques. Assist Chef, Sous Chef, and S&R staff as needed for service execution. Work as a team, assisting colleagues and focusing on Guest satisfaction. Maintain cleanliness, sanitation, and organization of work areas. Ensure kitchen and equipment are properly maintained and functioning. Comply with departmental policies, procedures, and standards. Physical Requirements: Stand and walk during 6-8 hour shifts. Reach, bend, stoop, and wipe. Lift and carry supplies and equipment up to 60 pounds; place items on high and low shelves. Required Education and Experience: At least three months' experience as a Specialty Sushi Chef or similar role. Knowledge of weights, measurements, and Japanese seafood techniques. Advanced knife skills. English comprehension (oral and written). Knowledge of health, safety, and sanitation practices. Professional appearance and demeanor.
