Full-Time

Texan Taco Bar is looking for a hands-on, lead-by-example Sous Chef to help run a high-volume scratch Tex-Mex kitchen. Same group as Parlor Pizza Bar — fast-paced, fun, scratch cooking, and a kitchen that actually moves on busy rooftop nights.

We cook tacos, quesadizzas, queso, elote, and other traditional Tex-Mex favorites from scratch, with a full bar and open air rooftop.

What you’ll do

Partner with culinary leadership to run daily kitchen operations (prep through close)
Lead and coach line cooks on stations (grill, sauté, fry, pantry, taco/queso production)
Uphold recipe standards, plate consistency, timing, and presentation
Own or support ordering, receiving, inventory, and product utilization
Help manage food cost, waste, and par levels
Train new cooks, reinforce station setup, and hold the team accountable
Step on the line during service and flex wherever the kitchen needs you
Maintain cleanliness, organization, and Chicago food-safety standards
Support a positive, no-drama kitchen culture

What we’re looking for

1+ years kitchen leadership (Sous Chef, CDC support, or strong lead cook ready to step up) in a high-volume restaurant
Comfortable in a scratch, high-volume Tex-Mex / Mexican / casual concept
Strong station skills and the ability to teach them
Organized, calm under pressure, and clear communicator
Team-first attitude and a real work ethic
Open availability including nights, weekends, and holidays
Food Handler / ServSafe Manager (or willingness to obtain)
Ability to stand for long shifts and lift 50 lbs as needed
Spanish/English bilingual a plus
