Head Baker

Caffè Ducali is seeking an experienced Baker for our new Winchester location. This is a hands-on production role responsible for preparing breads, pastries, desserts, fresh pasta and Roman-style pizza for Caffè Ducali, while also supporting bakery and dough production for our restaurant group. The ideal candidate is a skilled and passionate baker who takes pride in quality, consistency and craftsmanship and is comfortable working in a fast-paced, high-volume production environment. Responsibilities Prepare a variety of breads, pastries, desserts and other baked goods using established recipes and production standards Lead daily bakery production, ensuring proper quantities, quality and consistency across all products Produce and manage fresh pasta, including mixing, kneading, rolling or extruding, shaping, portioning and proper storage Prepare Roman-style pizza, including dough mixing, fermentation, portioning, shaping, baking and finishing Produce bread, pasta and pizza dough for other restaurants within the restaurant group as needed Develop a strong understanding of dough fermentation, hydration, temperature and handling Oversee bakery production staff and maintain an organized, efficient daily production schedule Maintain accurate production levels and adjust quantities based on sales, events and restaurant needs Monitor inventory, ordering and product waste Maintain a clean, organized and food-safe bakery and production workspace Follow all food-safety, sanitation and workplace procedures Assist with training and developing other members of the bakery and kitchen team Work collaboratively with the culinary teams across the restaurant group to maintain consistent standards and support changing production needs Qualifications Professional baking experience required Strong experience with bread, dough and pastry production Experience with fresh pasta production and/or Roman-style pizza is strongly preferred Understanding of dough fermentation, hydration, temperature control and production scheduling Experience in a high-volume bakery, restaurant or food-production environment preferred Ability to consistently execute recipes and maintain high standards of quality Strong organizational and time-management skills Ability to lead and communicate effectively with a production team Reliable, detail-oriented and comfortable with early-morning hours Ability to work independently while also being a collaborative member of the restaurant group About the Role This is an opportunity to play a key role in building the bakery and production program at Caffè Ducali from the ground up.
