Sushi Chef

An established hospitality group is seeking an experienced Sushi Chef in Midtown Manhattan. The role covers both à la carte sushi and omakase service. We are looking for someone who brings excellent fish, rice, and knife skills, consistent execution, and warm, professional hospitality.

Compensation
$80,000 per year.

Responsibilities
• Prepare and serve sushi for both à la carte orders and omakase service with precision, consistency, and care.
• Handle, butcher, portion, and prepare fish; make and maintain sushi rice; prepare garnishes and other ingredients to house standards.
• Keep the sushi station clean, organized, stocked, and ready for service.
• Follow proper receiving, labeling, storage, rotation, sanitation, and food-safety procedures.
• Support daily prep, opening, closing, and inventory needs.
• Work closely with the culinary and service teams on timing, quality, and presentation.
• Engage guests professionally when working in a guest-facing setting.

Qualifications
• Professional sushi-chef experience in a Japanese restaurant is required; experience with both à la carte and omakase service is preferred.
• Strong fish butchery, knife, sushi-rice, and sushi-preparation skills.
• High standards for cleanliness, organization, consistency, and hospitality.
• Dependable, collaborative, and composed during service.
