El Director del BOH es responsable de la gestión general de la cocina, desde la logística de la cadena de suministro hasta el desarrollo del personal. Te asegurarás de que todos los puestos estén debidamente dotados, formados y equipados con los recursos necesarios para mantener nuestros altos estándares de calidad y seguridad alimentaria.
Responsabilidades clave
Liderazgo Operativo
- Gestión de turnos: Lidera directamente al personal durante los turnos, creando hojas de montaje y supervisando los procedimientos de apertura o cierre para asegurar que la tienda esté completamente operativa.
- Planificación estratégica: Desarrollar acciones y áreas de enfoque basadas en las puntuaciones del Customer Experience Monitor (CEM) para mejorar continuamente la experiencia del cliente.
- Coordinación de la restauración: Trabaja estrechamente con el equipo de catering para garantizar la ejecución oportuna y la alta calidad de los pedidos de producción a gran escala.
Desarrollo y Formación del Equipo
- Personal: Entrevista y selecciona a los candidatos para el equipo de BOH.
- Mentoría: Lidera conversaciones proactivas con miembros del equipo y gerentes sobre su crecimiento personal y profesional.
- Formación Avanzada: Colaborar con el Equipo de Formación para abordar las necesidades del BOH y formar futuros líderes.
Excelencia Operativa y Cumplimiento
- Seguridad y estándares: Asegúrate de que la cocina cumpla en todo momento con las normativas locales, estatales y federales de salud y seguridad.
- Control de calidad: Completar y gestionar todas las listas de verificación requeridas, incluyendo las evaluaciones de calidad y seguridad alimentaria.
- Responsabilidad: Exigir que los miembros del equipo y la dirección rindan cuentas a los procedimientos establecidos y a los estándares de productividad.
- Protocolos de RRHH: Sigue estrictamente todos los protocolos de salud y recarga en cuanto a lesiones, medidas de seguridad y acoso.
Gestión financiera y de facilidades
- Control de Costes: Gestionar los costes de alimentos, papel y mano de obra en coordinación con el FOH y los Directores de la Cadena de Suministro para mantener la rentabilidad.
- Mantenimiento de las instalaciones: Gestionar los calendarios de limpieza y mantenimiento, y supervisar las reparaciones de equipos y los pedidos de almacén.
