Culinary Position - Pizza Cooks, Line Cooks Full-Time!

We're looking for a passionate and experienced Pizzaiolo to join our culinary team at A16 Rockridge. If you take pride in working with naturally leavened dough, wood-fired ovens, and authentic Southern Italian techniques, we'd love to meet you. Position Summary The Pizzaiolo is responsible for producing and cooking A16's signature wood-fired pizzas while maintaining the highest standards of quality, consistency, and hospitality. This position works closely with the Chef de Cuisine and kitchen team to ensure every pizza reflects A16's commitment to exceptional ingredients and traditional Italian craftsmanship.
The ideal candidate is organized, efficient, passionate about dough fermentation, and thrives in a fast-paced, team-oriented kitchen.
What You'll Do
Prepare, stretch, top, and bake wood-fired pizzas according to A16 standards.
Monitor dough fermentation, proofing, and quality throughout production.
Prepare and organize daily pizza mise en place.
Maintain proper dough handling, portioning, and storage procedures.
Operate and maintain a wood-fired oven safely and efficiently.
Ensure all pizzas meet A16's standards for quality, presentation, and consistency.
Maintain a clean, organized, and food-safe workstation.
Assist with inventory, product rotation, and daily prep as needed.
Work collaboratively with the entire kitchen team during service.
Support private events, catering, and special events when required.
Follow all food safety, sanitation, and company standards.
What We're Looking For

• 1 years of experience as a Pizzaiolo or Line Cook specializing in pizza.
• Experience working with naturally leavened dough and fermentation techniques.
• Experience operating a wood-fired oven.
• Strong understanding of Southern Italian cuisine is preferred.
• Ability to work quickly while maintaining exceptional attention to detail.
• Excellent organizational and communication skills.
• Positive attitude and willingness to learn.
• Team-oriented mindset with a passion for hospitality.
• Ability to multitask in a high-volume kitchen.
• Current California Food Handler Certification required.

Schedule
Full-time or Part-time position.
Evening, weekend, and holiday availability is required.
Schedule may vary based on business needs and private events.
Physical Requirements This position requires standing for extended periods, working in a high-temperature environment, repetitive lifting, bending, reaching, and carrying ingredients and equipment weighing up to 50 pounds.
