As a sushi cook, you will need the ability to perform all duties and serve in whatever capacity needed by the business as determined by the manager or chef. Responsible for the preparation of all food items at the station according to specifications and pre-set time limits. Follow standard preparation and cooking procedures of the assigned facility as designated by the manager or chef

Follow all recipes, portion controls, and presentation specifications as set by the restaurant

Coordinate the delivery of all foods within pre-set time standards

Set up, maintain side work, and/or close stations for scheduled shift (e.g., checks and/or breaks down and cleans equipment, preps all appropriate food items, stocks all food items and small wares, dates food items and stores according to "first in, first out" rotation method, etc.)

Prepare and plate station food items according to specifications and pre-set time limits

Ensure safety and sanitation standards are maintained

Properly use personal protective equipment

Respond to all "callbacks" and "echoes" to ensure ordered food is prepared on time

Maintain the proper pH for rice and document it in the pH log

Ensure hot food stays hot and cold food stays cold

Communicate any product runouts, equipment issues, and quality of service problems to the MOD immediately

Assist with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and all storage areas

Clean, sanitize, and organize all kitchen areas, walk-in coolers, and all storage areas according to OTG specifications

Develop and maintain positive working relationships with others and work toward the goal of customer satisfaction

Ensure adherence to quality expectations and standards

Relevant experience in Japanese-style cooking

Relevant experience working in a sushi restaurant
