The Role
We are seeking a skilled and passionate Sous Chef / Kitchen Manager to support our Executive Sushi Chef and lead daily kitchen operations. This is a hands-on leadership role for someone who thrives in a high-caliber, detail-driven environment and shares our commitment to precision, seasonality, and the art of Japanese cuisine.
Responsibilities
- Assist the Executive Sushi Chef in all aspects of kitchen operations, including prep, service execution, and quality control
- Oversee day-to-day kitchen management: scheduling, ordering, inventory, and cost control
- Uphold the highest standards of food quality, consistency, and plating across the a la carte menu, tasting menu progressions, and the Hand Roll Bar
- Train, mentor, and motivate kitchen staff to ensure a collaborative and professional team environment
- Maintain strict adherence to food safety, sanitation, and NYC Health Code standards
- Manage relationships with purveyors and ensure sourcing of premium, seasonal ingredients
- Collaborate with the culinary and beverage teams to support food and beer pairing menu development
- Step in to lead service in the absence of the Executive Chef
- Assist with private events and special programming as needed
Qualifications
- 3–5+ years of progressive culinary experience, with at least 1–2 years in a supervisory kitchen role
- Background in Japanese cuisine or sushi operations strongly preferred
- Deep understanding of fish fabrication, nigiri preparation, and seasonal seafood sourcing
- Experience working in a fine dining or Michelin-recognized environment is a strong plus
- Strong organizational skills with the ability to manage kitchen logistics, food cost, and labor
- A collaborative, calm, and solutions-oriented approach to leadership
- Passion for hospitality and an appreciation for the intersection of food and beverage culture
- NYC Food Handler's certificate required; ServSafe Manager certification preferred
