Location: Louisville, KY

A vibrant, design-forward Japanese dining concept in Louisville’s NuLu neighborhood is seeking a Sushi Chef to lead the sushi program and support full back-of-house operations.

This restaurant blends traditional culinary techniques with modern creativity to deliver an energetic and immersive guest experience centered around high-quality ingredients and bold flavors.

The Sushi Chef is responsible for leading the sushi program and supporting kitchen operations, ensuring exceptional food quality, strong team collaboration, and consistent execution. This role requires a polished, hands-on leader who thrives in a fast-paced, high-expectation, dinner-only environment.

Day in the Life:

• Lead and execute all sushi operations
• Collaborate with Kitchen Manager, Sous Chef, Sushi Sous Chef, and a team of approximately 7
• Work closely with FOH leadership to ensure seamless service
• Maintain high standards of food quality, presentation, and consistency
• Support ordering, inventory, and food cost controls
• Train and mentor team members within the sushi program
• Execute dinner-only service Tuesday through Saturday; closed Sunday and Monday

Requirements:

• Proven experience as a Sushi Chef or in a similar role
• Strong sushi fundamentals required, including knife skills, fish butchery, rice preparation, and traditional techniques
• Strong technical sushi skills and attention to detail
• Ability to work collaboratively within a team environment
• Solid understanding of kitchen operations
• Ability to thrive in a high-volume, upscale dining environment
• Passion for Japanese cuisine and guest experience
• Excellent communication and organizational skills
