Sushi Chef

MAKO is a Michelin-starred sushi restaurant in the West Loop led by veteran sushi chef BK Park. We are looking for a Sushi Chef with strong fundamental skills that wants to learn and develop in a critically acclaimed fine-dining environment.

Qualifications

• Knowledge of various sushi and preparation according to instruction/recipes and efficiently executing intricate, aesthetically pleasing sushi plates.
• Achieve and maintain proficiency in job functions of employees on the team, including but not limited to, follow the instructions to prepare food items and ingredients needed for menu items (including but not limited to sushi, maki, nigiri and sashimi) according to prescribed recipes and/or special requests.
• Ensure proper food storage, quality, and presentation standards, including temperature control, hygiene.
• Understand and follow the food allergy procedures and special orders/restrictions
• Effective communication with other staff and management
• A good team player and understand guest’s service
• Ability to work in a fast paced, demanding environment while maintaining the highest standard of food quality
• Can stand and exert well-paced mobility for periods of up to 8 to 10 hours

Requirements

• Roughly 4 years of Sushi experience, able to meet MAKO's standards of quality
• Flexible schedule-- able to work late evenings, Wednesday - Sunday, 1PM-close, & holidays (if needed).
• Ability to commute to and work at locations in both West Loop and Lincoln Park.
• Key Skills: Controlling/managing a stressful & fast paced environment, Problem solving, Communication, Organization, Food Consistency & Standards
• Possess a current and valid ServSafe Food Handler Certification

Compensation

• Pay for this position ranges from $28 to $34 per hour. This rate includes tips and is subject to increase based on your abilities and skills at performing job duties.
