For over 30 years, Sullivan St Bakery has baked bread the way we believe it should be made: simply, honestly, and with respect for the ingredients. Our breads are served in some of New York's best restaurants and our retail bakeries have become pillars of the neighborhoods they call home. We're looking for an Executive Pastry Chef to lead the next chapter of our pastry program.
The Role
This is a hands-on leadership position for a skilled pastry professional and leader who wants to build, not just maintain. You'll oversee daily production across our retail locations and catering efforts while shaping what comes next — new products, seasonal menus, wholesale offerings, and building a pastry team from the ground up. You'll thrive here if you love the balance of creativity and precision with the challenges of operating within a multifaceted 24/7 business model.
What You'll Do
- Lead daily production of pastries, viennoiserie, and desserts for retail, catering, and wholesale accounts
- Share commissary production responsibilities to keep output efficient and consistent across teams and locations
- Develop and launch new products and seasonal items
- Hire, train, schedule, and mentor the pastry team — building a culture of high standards and mutual respect
- Own product quality, production schedules, and inventory control
- Partner with the head baker, kitchen leadership, and ownership on product development and innovation
- Uphold rigorous cleanliness, food safety, and sanitation standards across all pastry operations
- Help build-out, manage and maintain MarginEdge platform
What You Bring
- 3–5+ years as a pastry chef or pastry lead, ideally in an artisan bakery or comparable high-volume, high-quality production environment
- Strong command of the fundamentals: laminated doughs, tarts, cakes, custards
- A track record of managing and motivating a team in a fast-paced setting
- A refined aesthetic sensibility and a feel for seasonality
- Excellent organization, time management, and communication
- Genuine care for craftsmanship and the people you work alongside
- A strong, example-setting work ethic
