This is not a traditional restaurant management position. This is an executive operating role for someone who understands that running a high-volume restaurant at 7:00 PM and running a nightclub at 1:00 AM require very different operating styles—while still demanding the same fundamentals: leadership, financial discipline, systems, accountability, guest experience, safety, and execution. Because our business is concentrated around hospitality and entertainment, the typical workweek for this position is Wednesday through Sunday. Monday and Tuesday are generally the company’s operational days off, although executive-level flexibility is expected when circumstances require it. The successful candidate must be capable of moving comfortably between restaurant operations, nightlife operations, financial performance, management development, compliance, staffing, and corporate-level accountability. COMPENSATION STRUCTURE This position is designed to reward measurable operating performance. Compensation will consist of a competitive base salary plus performance-based incentive compensation tied to agreed financial and operational results. Performance incentives may include measures such as:EBITDA and property-level profitabilityRevenue growthLabor cost managementCost of goods and purchasing controlsInventory accuracy and loss preventionBudget and forecast performanceManagement retention and developmentCompletion of operational initiativesCompliance and risk-management performanceGuest experience and service standardsTimeliness and accuracy of operational reportingAchievement of company-wide operational KPIs The purpose of this structure is straightforward: when the operations improve and the company performs, the Director of Hospitality Operations should participate in that success. Specific KPI targets, weighting, incentive thresholds, and compensation structure will be established as part of the employment agreement. THE POSITION The Director of Hospitality Operations will work directly with ownership and oversee General Managers and other operational leaders across multiple concepts. This individual will be responsible for creating consistency throughout the organization while maintaining the individual identity and operating needs of each venue. The position requires someone who can both build systems at a corporate level and execute them at the property level. You will not manage one restaurant. You will help lead an organization. PRIMARY RESPONSIBILITIES Multi-Unit OperationsOversee day-to-day operations across multiple restaurant and nightlife concepts.Lead, coach, and hold General Managers and Assistant General Managers accountable.Conduct regular property inspections and operational audits.Ensure company standards are consistently executed across all locations.Identify operational problems early and create measurable corrective action plans. Financial PerformanceTake ownership of property-level operating performance.Review weekly sales, labor, purchasing, inventory, and operating results.Manage labor percentages and scheduling efficiency.Monitor cost of goods, purchasing practices, waste, and inventory controls.Work with ownership and accounting teams to improve financial reporting and accountability.Understand and actively manage P&Ls rather than simply reviewing them.Develop forecasts and compare actual performance against goals.Identify opportunities to improve EBITDA and operating margins.Develop corrective plans when locations fall below financial targets. Restaurant OperationsUnderstand FOH and BOH systems, service standards, kitchen execution, food quality, sanitation, prep, scheduling, inventory, ordering, and guest recovery.Work effectively with chefs and kitchen managers while maintaining operational and financial accountability.Develop procedures that improve speed, consistency, cleanliness, and profitability. Nightlife & Entertainment OperationsUnderstand the unique operational demands of bars, nightclubs, live entertainment, DJs, VIP/bottle service, security, promoters, guest lists, nightlife staffing, and late-night operations.Maintain strong standards for security, ID verification, alcohol compliance, crowd management, employee professionalism, and guest safety.Understand that nightlife requires both hospitality and disciplined risk management.Be willing and able to evaluate operations during the actual hours in which nightlife venues operate. Leadership & AccountabilityDevelop strong General Managers rather than becoming the General Manager of every property.Establish clear expectations, deadlines, reporting structures, and follow-up procedures.Conduct management meetings and maintain accountability for commitments made.Address performance issues promptly and professionally.Recruit, train, develop, and retain strong management talent.Build succession plans and strengthen the company’s management bench. Systems & Corporate StructureCreate and enforce SOPs, checklists, reporting systems, inventory controls, scheduling procedures, opening/closing procedures, and management standards.Establish measurable operational KPIs throughout the company.Improve communication between ownership, operations, marketing, accounting, and individual locations.Ensure important projects and initiatives move from discussion to completion.Help transition a founder-led hospitality company into an increasingly structured, systems-driven organization. Compliance & Risk ManagementMaintain high standards related to California labor requirements, alcohol service, ABC regulations, food safety, security, workplace safety, and company policies.Work proactively to reduce operational and regulatory risk.Maintain professional documentation and follow-through regarding employee performance and operational incidents. SCHEDULE & AVAILABILITY The normal leadership workweek for this position is Wednesday through Sunday. The Director should expect a combination of:Daytime administrative and operational workProperty inspectionsManagement meetingsRestaurant service periodsEvening operationsPeriodic late-night nightclub operationsMajor events and special activations This is not a Monday-through-Friday corporate office position. The Director is not expected to be physically present for every operating hour at every venue. However, this person must understand that effective leadership in nightlife requires periodically being present when the business is actually happening, including nights and weekends. The position should be structured intelligently so that the Director can manage the organization at an executive level without simply becoming another closing manager. WHO WE ARE LOOKING FOR The ideal candidate will have substantial leadership experience in high-volume hospitality, preferably involving more than one type of operation. Strong candidates may come from:Multi-unit restaurant groupsRestaurant/bar groupsNightlife or entertainment hospitality companiesCasinos or casino hospitalityHotels with significant F&B and nightlife operationsHigh-volume entertainment districtsLarge independent hospitality groupsRegional restaurant operationsVenue or entertainment management Direct nightclub experience is strongly preferred, but we will consider an exceptional multi-unit hospitality operator who demonstrates an understanding of nightlife, entertainment, security, alcohol service, and late-night operations. REQUIRED QUALIFICATIONSSignificant hospitality management experience with increasing levels of responsibilityPrevious multi-unit, regional, district, Director of Operations, or comparable leadership experience strongly preferredDemonstrated understanding of P&Ls, EBITDA, labor management, COGS, inventory, purchasing, scheduling, and forecastingAbility to lead General Managers and other senior property-level managersStrong organizational and follow-through skillsExperience developing SOPs and operational systemsExperience establishing and managing operational KPIsStrong understanding of hospitality service standardsAbility to identify problems and implement solutions without constant directionComfortable operating in a fast-moving entrepreneurial organizationAvailability to work a primarily Wednesday-through-Sunday scheduleAvailability for nights, weekends, holidays, and late-night operations when leadership presence is requiredAbility to work on-site in Fresno, California THE PERSON WE NEED We are not looking for someone whose management style consists primarily of answering emails, attending meetings, and reviewing reports. We need an operator. You should be comfortable walking into a property, immediately recognizing what is working and what is not, talking with managers and employees, reviewing the numbers, identifying the underlying problem, establishing a solution, assigning responsibility, and following through until the issue is resolved. You should understand the relationship between operations and financial performance. A missed schedule, poor inventory control, excessive overtime, weak management, poor purchasing discipline, inconsistent service, or failure to execute a company initiative ultimately appears somewhere on the P&L. This position requires someone who understands that connection. At the same time, the goal of this position is not to personally solve every operational problem. The goal is to build managers, systems, and accountability so the organization performs consistently without requiring ownership to manage every detail.
