Sous Chef

Bar Sprezzatura, the ultimate cocktail bar experience nestled atop the Kimpton Hotel Theta at 790 8th Avenue, NYC. This chic rooftop destination merges the relaxed elegance of the Italian Riviera with a vibrant, modern atmosphere, renowned for signature spritzes and elevated stuzzichini. At our base, we are essentially an upscale Italian-inspired tapas Rooftop Bar, and we are looking for a new member to join our team!

Job Requirements:
- 1-3 years Sous Chef Experience
- High School Diploma or GED Required
- NYC DOHMH Food Handlers Card Required
- Breakfast Buffet Experience Preferred

Shift Availability:
- Morning Shift
- Weekdays, Weekends, Holidays

Sous Chef Duties and Responsibilities:

• Assist the Executive Chef in overseeing daily kitchen operations.
• Supervise Line Cooks, Prep Cooks, Kitchen Assistants, and other culinary staff.
• Assign daily tasks and monitor employee performance.
• Prepare, cook, and plate menu items according to established recipes and quality standards.
• Ensure all dishes are prepared consistently and presented attractively.
• Monitor food preparation during service to maintain quality and efficiency.
• Train, mentor, and coach kitchen staff on cooking techniques, food safety, and kitchen procedures.
• Assist with recruiting, interviewing, and onboarding new kitchen employees.
• Develop and test new recipes in collaboration with the Executive Chef.
• Help plan seasonal menus, daily specials, and promotional offerings.
• Ensure proper portion control to maintain consistency and control food costs.
• Monitor inventory levels and order food, beverages, and kitchen supplies.
• Inspect deliveries to ensure ingredients meet quality and freshness standards.
• Store food properly and rotate inventory using the FIFO (First In, First Out) method.
• Minimize food waste through effective inventory management and production planning.
• Ensure compliance with food safety, sanitation, and HACCP regulations.
• Maintain a clean, organized, and safe kitchen environment.
• Inspect kitchen equipment and report maintenance or repair needs.
• Enforce workplace safety policies and proper use of personal protective equipment (PPE).
• Prepare employee work schedules and assist with labor management.
• Coordinate food preparation during banquets, catering events, and special functions.
• Address customer concerns related to food quality when required.
• Monitor kitchen productivity and recommend process improvements.
• Assist with budgeting, food costing, and purchasing decisions.
• Collaborate with restaurant managers and front-of-house staff to ensure smooth service.
• Step into the Executive Chef’s role during their absence.
• Stay current with culinary trends, cooking techniques, and industry best practices.
• Maintain accurate production, inventory, and food safety records.
• Foster teamwork, professionalism, and a positive kitchen culture.
• Perform other duties assigned by the Executive Chef or Food and Beverage Manager.
