Gina's Cucina Siciliana
Gina’s Cucina Siciliana is looking for an experienced Sous Chef to join our opening kitchen team in the Kentlands of Gaithersburg, Maryland.
The Sous Chef will report directly to the Chef de Cuisine and take a hands-on role in the day-to-day operation of the kitchen. We’re looking for someone who is comfortable working alongside the team, takes pride in consistency and organization, and can help keep the kitchen prepared, professional, and running smoothly.
Gina’s is centered around Sicilian family recipes and our senza glutine approach to cooking. We’re looking for someone with an interest in Italian and Sicilian cuisine, strong kitchen fundamentals, and a willingness to learn and execute Gina’s recipes, standards, and gluten free methods.
Responsibilities:
- Support the Chef de Cuisine with the daily operation of the kitchen
- Lead and supervise prep and line cooks during prep and service
- Help organize daily prep, station setup, opening, and closing procedures
- Maintain consistency in food quality, presentation, portioning, and execution
- Train and coach BOH team members on recipes, techniques, SOPs, sanitation, and food safety standards
- Follow and reinforce Gina’s gluten free procedures and cross-contact controls
- Monitor food quality, temperatures, labeling, rotation, storage, and kitchen sanitation
- Assist with ordering, receiving, inventory, waste control, and proper product storage
- Monitor prep levels, product availability, equipment, and staffing needs and address issues before they affect service
- Work closely with FOH leadership to support smooth and timely service
- Step into any kitchen station when needed
- Help maintain a respectful, organized, and accountable kitchen environment
What We’re Looking For:
- Previous Sous Chef, Kitchen Manager, or comparable kitchen leadership experience
- Strong cooking fundamentals and confidence working through busy service
- Good organization, communication, and food safety habits
- Comfortable training staff and giving clear, respectful direction
- Reliable, composed, and willing to take responsibility when problems come up
- Interest in Italian and Sicilian cuisine and a willingness to learn Gina’s gluten free methods
- Able to work well with both BOH and FOH teams
- Attention to detail and a strong sense of kitchen organization
