il Buco Commissary/Bakery , the newest member of the Il Buco Family Group, is looking for a passionate and experienced Pastry Cook to join our team at our Hampton, NY (Plank Road) location.

Our bakery takes pride in naturally leavened products and emphasizes the use of organic and locally sourced ingredients. This is an exciting opportunity for a pastry professional who is passionate about baking, eager to continue developing their skills, and interested in growing within a thoughtful and collaborative culinary environment.

Please note: Due to the bakery’s location and early production schedule, candidates must live within a reasonable commuting distance, have reliable transportation, and have flexible availability. This role requires early morning availability to prepare pastries and baked goods for morning production, as well as weekends and holidays as needed.

Working closely with the Head Baker and pastry team, the Pastry Cook will support daily pastry production while maintaining the highest standards of quality, consistency, cleanliness, organization, and food safety. You will:

• Prepare and execute a variety of pastries and baked goods, including breakfast pastries, crostatas, muffins, cookies, croissants, and other seasonal offerings.

• Prepare ingredients by washing, measuring, slicing, peeling, roasting, caramelizing, and completing other necessary preparations.

• Scale, mix, portion, shape, laminate, proof, and bake a variety of doughs and pastry products.

• Assist with fermentation and demonstrate an understanding of how fermentation affects dough development and finished products.

• Execute pastry recipes with precision, consistency, and attention to detail.

• Set up and break down the pastry station efficiently at the beginning and end of each shift.

• Maintain proper food storage, labeling, and handling procedures.

• Ensure utensils, trays, tools, and equipment are clean, sanitized, and ready for use.

• Clean and maintain the pastry and kitchen areas according to established food safety and sanitation standards.

• Follow proper food handling, sanitation, DOH, and OSHA guidelines.

• Assist the Head Baker and bakery team with daily production and special projects as needed.

• Work efficiently as part of a team to meet production goals and ensure pastries are ready on schedule.

• Maintain a clean, organized, and safe workspace throughout the shift.

• Support other departments when needed and contribute to the overall success of the Il Buco Family.

You are a passionate pastry professional who takes pride in your craft and understands the importance of precision, consistency, organization, and teamwork. You have a strong interest in pastry and baking and are excited to continue developing your technical skills in a professional environment.

You have:

• At least 1 year of professional pastry or baking experience , preferably in a high-quality bakery, restaurant, or hospitality environment.

• A genuine passion for pastry, baking, and quality ingredients.

• An understanding of pastry fundamentals, fermentation, laminated doughs, and baking techniques.

• Experience with or a strong interest in breakfast pastries, croissants, crostatas, muffins, cookies, and other baked goods.

• The ability to accurately scale, mix, portion, shape, laminate, proof, and bake doughs and pastries.

• Strong attention to detail and a sense of urgency, particularly in a production environment.

• Good time-management and organizational skills with the ability to prioritize multiple tasks.

• A responsible and dependable work ethic with the ability to work independently while also contributing to a team.

• Clear and respectful communication skills.

• The ability to receive direction and feedback positively and apply it effectively.

• An understanding of the importance of professionalism, teamwork, and respect in the workplace.

• Knowledge of food safety, DOH, and OSHA standards and regulations.

• Professional working proficiency in English is a plus.

• Ability to lift up to 25 lbs. frequently and 50 lbs. occasionally .

• Ability to stand and work for extended periods, including 4- to 8-hour shifts .

• Ability to bend, reach, lift, and move throughout the bakery during production.

• Ability to work in an active bakery environment with varying temperatures.

• Ability to safely operate professional kitchen and bakery equipment.

• Ability to work early morning shifts, weekends, and holidays as needed.

• Reliable transportation to and from our Hampton (Plank Road) location.

• Candidates must live within a reasonable commuting distance of the bakery.
