SUMMARY Mike & Patty’s is a New England–based craft-casual breakfast brand built on the belief that breakfast can make or break your day. Flourhouse Bakery produces the bread that powers every Mike & Patty’s sandwich, and we are seeking a Head Baker to lead our bakery operations as we continue to grow. MISSION The Bakery Operator / Head Baker is responsible for overseeing all bakery production, quality standards, food safety, and team leadership at Flourhouse Bakery. This role ensures consistent, high-quality bread and baked goods are produced and delivered to all Mike & Patty’s locations, supporting the company’s craft-casual breakfast experience and long-term growth strategy. RESPONSIBILITIES The Head Baker is responsible for overseeing daily bread and baked goods production, ensuring consistent quality, food safety, and operational reliability across all locations. This role balances hands‑on baking with leadership and systems management, owning bakery performance across quality standards, production planning, food safety, labor, cost control, and team development. This position leads production scheduling, recipe execution, and quality control to ensure every product meets established specifications for flavor, texture, and freshness. The Head Baker maintains a clean, safe, and inspection‑ready bakery, ensures compliance with all food safety requirements, and oversees training and certification for the bakery team. The role also owns bakery labor and food cost performance, managing purchasing, yields, waste, and staffing within budget while protecting product integrity. As a leader, the Head Baker hires, trains, and develops a high‑performing team, setting clear expectations and fostering a culture of accountability, consistency, and pride in craft. The Head Baker works closely with operations and store teams to forecast needs, prevent disruptions, and support menu changes and limited‑time offerings. Innovation is encouraged when it supports consistency and scalability. Qualified candidates have at least three years of artisan bread baking experience, prior leadership in a high‑volume bakery environment, strong organizational and communication skills, and the ability to work early‑morning production schedules. ServSafe Manager certification is required or must be obtained shortly after hire.
