La Vita Nuova is a neighborhood restaurant, featuring seasonally and daily changing Italian cuisine with classic pasta and wood-oven pizza, while Alta 1897 offers chef-curated multi-course tasting experiences, in an elegant and intimate dining room. Both concepts source heavily from local growers and showcase wineries that share our dedication to responsible and ethical agriculture.
We hold ourselves to a high standard where teamwork, collaboration, and attention to detail are not optional — they are essential. Details matter. Integrity is expected. The Standard is the Standard. This is who we are.
About the Sous Chef role:
We are seeking a creative, detail-oriented, and motivated individual to join our culinary team as a Sous Chef.
The right candidate is someone who can oversee all aspects of kitchen operations, including food preparation, cooking, and plating. You’ll support the Chef de Cuisine and the culinary team in all operations and communicate goals for the kitchen as a piece of the overall vision for the restaurant. Sous Chefs assist with management of labor, inventory oversight, and enforcement of health and safety standards in the kitchen, walk ins, and dry storage.
Demonstrating the ability to work as part of our team is just as important as the other skills you bring to the restaurant. You’ll need a strong desire to continue learning and to take a leadership role in staff education and development. Motivating and mentoring the culinary team is a daily duty.
What you’ll do:
Sourcing, ordering and receiving the highest quality ingredients
Assist with tasting menu development and implementation
Train and mentor chefs
Must have the ability to multitask and work under pressure in a fast paced environment while maintaining a positive attitude
Collaborate with teammates to execute dishes at the highest possible quality
Lead organization and management of the kitchen and food inventory
Adapt to changing needs during service
Present a clean and professional appearance
Maintain a calm, courteous, and professional demeanor at all times
Ensure that guests have a positive and memorable experience
Qualifications:
At least 1 year experience as a Sous Chef in a full service fine dining tasting menu concept
Culinary degree preferred
Available to work a variety of hours, days and shifts, including weekends
Strong Understanding of Health and Safety Standards
Ability to move and lift 30 pounds at a time
Must be able to stand and walk for an extended period

Time management skills and strong ability to prioritize tasks to ensure smooth service
